Palak Kofta Kadhi
Serves 5-6
Recipe in English:
Ingredients:
-Dahi (Yogurt) 2 Cup
-Baisan (Gram flour) roasted & sifted ½ Cup
-Pyaz (Onion) grinded 1 medium
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Namak (Salt) 1 tsp or to taste
-Dhania (Coriander seeds) roasted & crushed 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Garam masala powder 1/4 tsp
-Lal mirch (Red chilli) crushed ½ tsp (optional)
-Haldee powder (Turmeric powder) 1 tsp
-Pani (Water) 4-5 Cups or as required
-Baisan (Gram flour) sifted 3/4 Cup
-Palak (Spinach) 2 Cups
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Baking soda 1/4 tsp
-Zeera (Cumin seeds) crushed 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Garam masala powder ½ tsp
-Hot water 3-4 tbs or as required
-Cooking oil for frying
Prepare Tadka:
-Cooking oil 3-4 tbs
-Pyaz (Onion) sliced 1 small
-Lehsan (Garlic) sliced 2 cloves
-Sabut lal mirch (Button red chillies) 3-4
-Zeera (Cumin seeds) 1 tsp
-Kary pata (Curry leaves) 8-10
Directions:
-In pot,add yogurt and whisk well.
-Add gram flour,onion,ginger garlic paste,salt,coriander seeds,red chilli powder,garam masala powder, red chilli crushed,turmeric powder and whisk until well combined.
-Add water and whisk again.
-Put it on stove,mix continuously and bring it to boil,cover and cook on low flame for 1 hour & keep mixing in between.
-In bowl,add gram flour,spinach,ginger garlic paste,baking soda,cumin seeds,turmeric powder,salt,red chili powder,garam masala powder and mix well.
-Gradually add hot water and mix well,cover and let it rest for 10 minutes.
-Grease hands with oil,take a mixture and make balls of equal sizes (makes 9-10).
-In wok,heat cooking oil and fry spinach balls on medium flame until golden brown.
-In cooked kadhi,add fried spinach balls and mix gently,cover and cook on low flame for 20-25 minutes.
For Tadka:
-In frying pan,add cooking oil,onion,garlic,button red chillies and fry until light golden.
-Add cumin seeds,curry leaves and mix well.
-Now pour tadka in curry & serve!

-Bowl mein baisan,palak,adrak lehsan paste,baking soda,zeera,haldee powder,namak,lal mirch powder aur garam masala powder dal ker ache tarhan mix ker lein.
-Thora thora ker ka garam pani shamil karein aur ache tarhan mix ker lein,dhak ker 10 minutes kliya rakh dein.
-Haathon ko oil sa grease karein aur mixtue ko la ker ek jaisay sizes ki balls tayyar ker lein (makes 9-10).
-Karhai mein cooking oil garam karein aur palak ki balls ko darmiyani ancch per golden brown hunay tak fry ker lein.
-Cooked kadhi mein fried palak balls dal ker gently mix karein aur dhak ker halki ancch per 20-25 minutes kliya paka lein.
For Tadka:
-Frying pan mein cooking oil,pyaz,lehsan aur sabut lal mirch dal ker golden brown hunay tak fry ker lein.
-Zeera aur kary pata dal ker ache tarhan mix ker lein.

General TSO Chicken

Recipe in English:
Ingredients:
-Chicken fillets ½ kg
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Soy sauce 1 tsp
-Maida (All-purpose flour) ½ Cup
-Cornflour ¼ Cup
-Safed mirch powder (White pepper powder) ¼ tsp
-Baking soda 1 pinch
-Anday ki safedi (Egg whites) 2
-Water 2-3 tbs
-Cooking oil for frying
-Cooking oil 1-2 tbs
-Lehsan (Garlic) chopped 1 tbs
-Adrak (Ginger) chopped ½ tbs
-Dried red chillies sliced 3-4
-Chicken stock 1 Cup
-Brown sugar powdered 3 tbs
-Soy sauce 2 tbs
-Rice vinegar 2 tbs (substitute: Vinegar (Sirka) 2 tbs)
-Hot sauce 3 tbs
-Dark soy sauce 1 tsp
-Namak (Salt) ½ tsp or to taste
-Safed mirch powder (White pepper powder) ½ tsp
-Cornflour 1 & ½ tsp

Directions:
-Cut chicken into small cubes.
-In a bowl,add chicken,salt,black pepper powder,soy sauce & mix well,cover & marinate for 15 minutes.
-Add all-purpose flour,cornflour,white pepper powder,baking soda,egg whites & mix well.
-Add water & mix well.
-In a wok,heat cooking oil and fry marinated chicken on medium flame for 2-3 minutes & take out from oil & rest for 3 minutes.
-Heat up oil and fry again on high flame until golden brown & set aside for later use.
-In a wok,add cooking oil,garlic,ginger,dried red chillies & fry until light golden.
-Add chicken stock,brown sugar,soy sauce,rice vinegar,hot sauce,dark soy sauce,salt,white pepper powder,mix well & bring it to boil.
-In cornflour,add water and whisk well.
-Now add dissolved cornflour,mix well & cook until thickens (1-2 minutes).
-Now add fried chicken,mix well & cook for a minute.
-Add dried red chilli and mix well.
-Garnish with sesame seeds,green onion leaves & serve with fried rice.

-Garam masala powder ¼ tsp
-Aalo (Potatoes) boiled & cubes 3-4 medium
-Hari mirch (Green chilli) chopped 3-4
-Hara dhania (Fresh coriander) chopped 2 tbs
-Podina (Mint leaves) chopped 2-3 tbs
Prepare Dough:
-Maida (All-purpose flour) sifted 3 Cups
-Namak (Salt) ½ tbs or to taste
-Ghee 3-4 tbs
-Water 1 Cup or as required
-Ghee 6-7 tbs
-Maida (All-purpose flour) 4 tbs
-Cornflour 2 tbs
-Cooking oil for frying
Directions:
Prepare Potato Filling:
-In a wok,add cooking oil,cumin seeds,carom seeds & mix well.
-Add ginger & mix well.
-Add red chilli powder,turmeric powder,salt,chaat masala powder,chicken powder,garam masala powder & mix well.
-Add potatoes and mix well,turn off the flame & mash well with the help of the masher.
-Add green chillies,fresh coriander,mint leaves & mix well.
-Let it cool.
Prepare Dough:
-In a bowl,all-purpose flour,salt & mix well.
-Add ghee and mix well until it crumbles.
-Gradually add water & knead until hard dough is formed,cover & let it rest for 20-30 minutes.
-In a bowl,add ghee & whisk well.
-Gradually add all-purpose flour & whisk well.
-Add cornflour and whisk well.Flour paste is ready!
-Knead dough until smooth (5-6 minutes) & divide into 7 pieces with the help of cutter (80g each).
-Take one piece and make a ball,dust dry flour & roll out with the help of rolling pin.
-Apply flour paste generously,dust dry flour & spread another rolled dough over it,stack all seven layers one above the other,apply flour paste & dust dry flour in between.
-Apply flour paste & dust dry flour over the top layer and roll out with help of rolling pin,fold around the rolling pin then cut from the center and roll out in rectangular shape with help of rolling pin.
-Apply flour paste & dust dry flour and repeat the same process two more times.
-Cut the rolled dough in 12 squares pieces of equal sizes (4 x 4”).
-Take one square piece,dust dry flour & roll out slightly with the help of rolling pin.
-Add 1 tbs of prepared potato filling in the center,apply water,fold the sides of the dough over the filling and gently press the edges together to seal the suffering insides (makes 12).
-In frying pan,heat cooking oil & fry on low flame until golden brown & crispy and pour hot oil in between.
-Serve with tomato ketchup & green chutney!

-Namak (Salt) ¼ tsp or to taste
-Bund gobhi (Cabbage) chopped 1 Cup
Assembling:
-Maida (All-purpose flour) 2 Tbs
-Pani (Water) 1-2 tbs or as required
-Samosa patti 10-12
-Chili garlic sauce ½ tbs
-Mozzarella cheese grated 1 tbs
-Hara pyaz (Green onion) leaves chopped to sprinkle
-Cooked chicken pieces
-Coleslaw
--Anday (Eggs) 2
-Namak (Salt) ½ tsp or to taste
-Safed mirch powder (White pepper powder) ½ tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Mozzarella cheese grated 1-2 tbs
-Maida (All-purpose flour) 1 Cup or as required
-Bread crumbs 1 Cup or as required
-Oil for frying
Directions:
-Prick chicken fillets with fork from both sides.
-Sprinkle salt,black pepper crushed and white pepper powder,apply evenly and let it marinate for 15-20 minutes.
-In frying pan,add oil and fry chicken fillets from both sides until done (4-5 minutes each side).
-Cut into desired shapes & set aside.
For Coleslaw:
-In bowl,add cream,mayonnaise,black pepper crushed,white pepper powder,salt and whisk well.
-Add cabbage and give it a good mix.
-Refrigerate for 30 minutes.
Assembling:
-In all-purpose flour,add water and mix well to make a paste & set aside.
-Take two samosa patti,place one samosa patti horizontally,apply all-purpose flour paste then place second samosa patti vertically over first one,it will make plus (+) sign.
-Add and spread chili garlic sauce,add mozzarella cheese,green onion leaves,cooked chicken pieces, coleslaw in the center and fold the top side so that it covers the filling.
-Apply all-purpose flour paste and fold all sides to make a square box.
-Make sure that all sides are properly sealed and prepare the remaining box patties similarly.
-In eggs,add salt,white pepper powder,black pepper powder,mozzarella cheese and whisk well.
-Now coat prepared box patties in all-purpose flour,dip into beaten eggs then coat in bread crumbs and again dip into beaten eggs then coat in bread crumbs.
-In frying pan,heat oil and fry box patties from both sides until golden brown.
-Serve with tomato ketchup.

-Tukhme balanga (Basil seeds) 1 & ½ tbs
-Water as required
-Doodh (Milk) 3 Cups
-Lal sharbat (Rose syrup) ¼ Cup
-Condensed milk 2-3 tbs
Assembling:
-Ice cubes
-Colored jelly cubes
-Saib (Apple) peeled & sliced 1 Cup
-Strawberry sliced 1 Cup
-Banana sliced 1 Cup
-Pineapple slices 1 Cup
-Badam (Almonds) sliced ¼ Cup
Directions:
-In hot water,add instant jelly & mix well,pour in a dish,let it cool & refrigerate until set.
-Cut jelly into small cubes & set aside.
-In a kettle,add water & bring it to boil.
-Add tapioca sago,mix well & cook on medium flame for 13-14 minutes or until transparent then strain,rinse with water & set aside.
-In a cup,add basil seeds,water & let it soak for 5-6 minutes & set aside.
-In a jug,add milk,rose syrup,condensed milk,whisk well & set aside.
Assembling:
-In a jug,add ice cubes,colored jelly cubes,apple,strawberry,banana,pineapple,almonds,cooked tapioca sago,soaked basil seeds & prepared milk,mix well & serve!

-Cooking oil for frying

Tadka:
-Palak (Spinach) blanched 1 bunch
-Hari mirch (Green chilies) 7-8
-Desi ghee ¾ Cup
Directions:
-In pressure cooker,add beef boneless cubes,cumin seeds,salt,black pepper crushed,ginger garlic paste, green chili paste,water,mix well and bring it to boil.
-Cover and cook on medium low flame until meat is tender (approx. 40-45 minutes) then mash well,take out in a bowl & set aside.
-In pressure cooker,add split green lentil,wheat,rice,water,mix well & bring it to boil.
-Cover and cook on medium flame until tender (approx. 1 hour).
Prepare Kabab:
-In bowl,add beef mince,green chili paste,ginger garlic paste,salt and mix well.
-Add gram flour and mix until well combined.
-Grease hands with oil,take a mixture and make small kababs of equal sizes (makes 40-45).
-In frying pan,heat cooking oil and fry kababs until golden brown & set aside for later use.
-Turn off the flame and blend the mixture with the help of the blender until required consistency.
-Turn on the flame,add cooked meat and mix well.
-Add salt and mix well.
-Add water and mix well.
-Now add prepared kababs and give it a good mix.
Tadka:
-In blender,add spinach,green chilies,blend well & set aside.
-In frying pan,add desi ghee and let it melt.
-Add blended green paste and fry for 4-5 minutes.
-Now pour tadka on hareesa mixture,mix & serve!

-Adrak lehsan paste (Ginger garlic paste) 3 tbs
-Hari mirch (Green chillies) paste 4-5 tbs

-Dahi (Yogurt) whisked 250 gms
-Cream 200 ml

Directions:
-In bowl,add chicken mince,red chili powder,turmeric powder,garam masala powder,salt,gram flour and mix until well combined.
-Give a charcoal smoke for 2 minutes.
-Grease hands with oil,take a mixture 1 tbs and make meat balls of equal sizes (makes 30-32).
-In wok,add cooking oil and fry meatballs until golden brown & set aside.
-In the same wok,add onion and sauté until translucent and take out in a bowl & set aside.
-In grinder,add almonds and grind well.
-Add sautéed onions and grind to make a smooth paste.
-In the same wok,heat cooking oil,add grinded onion & almonds paste and mix well.
-Add ginger,garlic paste,grinded green chilies and mix well.
-Add salt and mix.
-Add chicken white korma and mix well.
-Add yogurt,mix well and cook for 2-3 minutes.
-Now add fried meatballs and mix gently.
-Cover and cook on medium flame for 5 minutes then cook on high flame until oil separates.
-Add cream,mix well & set aside.
-In pot,add half quantity of boiled rice,meat balls with gravy,mint leaves,fresh coriander and remaining quantity of boiled rice.
-In kewra water,add yellow food color and mix well.
-Add dissolve food color and ghee,cover and steam cook on low flame for 8-10 minutes & serve!

Ingredients:
-Sugar ½ Cup
-Nurpur butter Unsalted 200g
-Anda (Egg) 1
-Vanilla essence 1 tsp
-Maida (All-purpose flour) 2 & ½ Cups
-Baking powder ½ tsp
-Namak (Salt) ½ tsp
-Milk chocolate grated 200g
-Coconut oil 1 tsp
-Rainbow sprinkles as required
Directions:
-In a blender machine,add sugar & grind to a fine powder & set aside.
-Cut butter into cubes.
Tip: If butter is refrigerated,cover it with hot ceramic/glass bowl for few minutes to soften the butter.
-In a bowl,add butter and beat well.
-On a bowl,place sifter,add powdered sugar,sift it then mix with the help of spatula then beat well until light,fluffy & smooth.
-Add egg,vanilla essence & beat at low speed until mixed.
-Place sifter on a bowl,add all-purpose flour,baking powder,salt and sift dry ingredients together then fold with the help of spatula then beat until just combined & transfer the mixture on a clean working surface lined with cling film.
-Grease hand with butter,make a smooth ball of dough,cover with cling film and press gently to flatten the dough into a square shape & refrigerate for 30 minutes.
-Take out from from refrigerator,remove cling film,dust all-purpose flour & roll out evenly with the help of rolling pin (thickness: ¼ inch)
-Dip cookie cutter in all-purpose flour & cut into desired shapes with the help of the cookie cutter.
-Place cookies on a baking tray lined with butter paper and refrigerate for 20 minutes.

-Bake in preheated oven at 180C for 15 minutes.
Option # 2: Pot Baking
-In a pot,place steam stand/wire rack,cover & preheat on medium flame for 15 minutes.

-After baking,let them cool on cooling rack to cool completely.

Dry Fruit Mix Powder Recipe in English:
Ingredients:
-Badam (Almonds) ¾ Cup
-Pista (Pistachio) ½ Cup
-Kaju (Cashew nuts) ½ Cup
-Saunf (Fennel seeds) 2 tsp
-Sonth (Dried ginger) ½ inch piece
-Hari elaichi seeds (Green cardamom seeds) powder ½ tsp
-Brown sugar or Raw sugar ½ Cup (optional)
-Jaifil (Nutmeg) powder ½ tsp
Directions:
-In frying pan,add almonds,pistachio,cashew nuts and roast for 2 minutes.
-Add fennel seeds and roast for 1 more minute & let it cool down.
-In mixer,add roasted nuts,dried ginger and green cardamom seeds powder,grind well until fine powder (in batches) & take out in airtight jar.
-In mixer,add brown sugar or raw sugar and grind well & take out in airtight jar.
-Add nutmeg powder and mix well.
-Let it cool completely then store in airtight container.
-Can be serve with porridge,yogurt,cererals,milk,smoothies,shakes,desserts & sweets.
Important instructions:
For babies above 10 months and toddlers, start with adding ¼ TSP & slowly increase it to 1 TSP.
For children of 2 years & above, add 1 TSP to ½ TBS in milk, porridge or cereals.
This powder can be given to babies above 10 months, toddlers & children of all ages

Directions:
-In frying pan,ad cloves,black peppercorns,cumin seeds,coriander seeds,nutmeg,mace,fennel seeds, cinnamon sticks,green cardamom,star anise,almonds,whole red chilies,chickpeas and roast until fragrant & let it cool.
-In mixer,add roasted spices and grind to make a fine powder.
-In bowl,add grinded spices,rose water and kewra water,mix well & set aside.
-Grate onions with the help of the grater and squeeze excess moisture with the help of the muslin cloth & set aside.
-In chopper,add ginger,garlic,green chilies,fresh coriander,raw papaya and chop well.
-Add beef mince (must be dried),salt,red chili powder,chaat masala,coconut milk powder,grinded spices,squeeze onion and chop until well combined.
-Add beef fat and chop well & refrigerate for 2-24 hours.
-Grease your hands with oil,take a mixture and make a kebabs onto the wooden & metal skewers and tie the kebabs with a kitchen thread.
Option no.1: In grill pan,add oil and fry kebabs from all sides,cover & steam cook for 2-3 minutes.
-Give a coal smoke for 2 minutes.
Option no 2: Put the skewers on BBQ grill and grill until done and basting with oil.

-Kernel corns boiled 1/3 Cup
-Chawal (Rice) ½ Cup (soaked for 30 minutes)
-Kali mirch powder (Black pepper powder) ½ tsp
-Onion powder ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Dried parsley 1 tsp
-Namak (Salt) ½ tsp or to taste
-Chicken stock 1 & ½ litre
-Doodh (Milk) 1 Cup
-Corn flour 1 tbs
Directions:
-In bowl,add chicken tikka masala,lemon juice and mix well.
-Add chicken fillets,mix well and marinate for 15 minutes.
-In frying pan,add cooking oil and fry marinated fillets from both sides until done (approx. 5-6 minutes each side).
-Give a charcoal smoke for 2-3 minutes,set aside & cut into cubes.
-In chopper,add cooked chicken cubes,chop coarsely & set aside.
-In pot,add cooking oil,onion and mix.
-Add garlic,bay leaves and mix well.
-Add peas,carrot,green onion and fry for 1-2 minutes.
-Add kernel corns,rice and mix well.
-Add black pepper powder,onion powder,cumin powder,dried parsley,salt and mix well.
-Add chicken stock,mix well and bring it to boil.
-Cover and cook on medium low flame for 30-40 minutes.

-Add water and mix,cover and cook on low flame until tender (approx. 40-50 minutes).
-In pot,add cooking oil,onion and fry until light golden.

Ingredients:
-Oil 2-3 tbs
-Pyaz (Onion) chopped 1 large
-Adrak lehsan paste (Ginger garlic paste) 2 tsp
-Fish boneless cubes 500 gms
-Lemon juice 3 tbs
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Dhania (Coriander seeds) roasted & crushed 1 tsp
-Lal mirch powder (Red chili powder) 1 & ½ tsp or to taste
-Curry powder 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Namak (Salt) 1 & ½ tsp or to taste
-Tomato paste 2 tbs
-Aloo (Potatoes) boiled 250 gms
-Hara dhania & Podina (Fresh coriander & Mint leaves) chopped ½ Cup
-Pickled jalapenos finely chopped 2 tbs
-Anday (Eggs) 2
-Pani (Water) ¼ Cup
-Bread crumbs ½ Cup or as required
-Paprika powder 1 tsp
-Maida (All-purpose flour) ½ Cup or as required
-Oil for frying
Directions:
-In frying pan,add oil,onion,ginger garlic paste and mix well.
-Add fish and mix well.
-Add lemon juice,cumin seeds,coriander seeds,red chili powder,curry powder,turmeric powder and salt, mix well and cook for 2-3 minutes.
-Add tomato paste,mix well and cook until it dries up & let it cool.
-In bowl,add potatoes and mash well.
-Add cooked fish mixture,fresh coriander & mint leaves,pickled jalapenos.
-Grease your hand with oil and mix well.
-Take a mixture and make a shape of croquettes.
-In eggs,add water and whisk well.
-In bread crumbs,add paprika powder and mix well.
