Falsa Sharbat
Recipe in English:
Ingredients:
-Falsay (Grewia) washed ½ Kg
-Pani (Water) 1 Cup
-Cheeni (Sugar) 1 kg
-Pani (Water) 1 litre
-Lemon juice ¼ Cup
-Kala namak (Black salt) 1 & ½ tbs
-Falsa sharbat (Grewia syrup) 2 tbs or to taste
-Ice cubes
-Pani (Water) chilled 1 Cup
Directions:
-In pot,add grewia and water,mix well and cook for 5 minutes.
-Cover and cook on low flame until soft (5-6 minutes).
-Now mash well with masher then strain with the help of the strainer by adding little water in between, discard seeds & set aside.
-In wok,add sugar and water,mix well and cook until sugar is dissolved and continue cook until syrup thickens.
-Now add cooked grewia pulp,mix well and cook on medium low flame for 2-3 minutes.
-Add lemon juice,black salt and mix well,bring it to boil and cook for 5-6 minutes.
-Let it cool down.
-Can be stored in refrigerator for up to a month (yields 1.5 litres).
-In serving glass,add grewia syrup,ice cubes and water.
-Stir & serve.

-Dhak dein aur halki ancch per naram hunay tak paka lein (5-6 minutes).
-Ab masher sa ache tarhan mash karein phir strainer ki madad sa strain ker lein aur bech bech mein thora pani daltay rahein,beej ko pheek dein aur side per rakh dein.
-Karhai mein cheeni aur pani dal ker ache tarhan mix karein aur cheeni dissolves ho janay aur sheera garha hunay tak paka lein.
-Ab paka huwa falsay ka pulp dal ker ache tarhan mix karein aur halki darmiyani ancch per 2-3 minutes kliya paka lein.
-Lemon juice aur kala namak dal ker ache tarhan mix karein aur ubal anay ka bad 5-6 minutes kliya paka lein.
-Thanda ker lein.
-Refrigerator mein 1 month tak store ker saktay han (yields 1.5 litres).
-Serving glass mein falsa sharbat,ice cubes aur pani dal dein.

Saunf Sharbat
Serves 8-10
Recipe in English:
Ingredients:
-Saunf (Fennel seeds) ¼ Cup
-Water hot 1 Cup
-Kali kishmish (Black raisins) ¼ Cup
-Water hot 1 Cup
-Misri (Rock sugar) ¼ Cup or as required
-Water 1 litre
-Ice crushed as required
-Lemon juice 2 tbs
Directions:
-In grinder,add fennel seeds and grind to make powder.
-Transfer to a bowl,add hot water,mix well & let it soak it for 1 hour.
-In a bowl,add black raisins,hot water,mix well and let it soak for 1 hour.
-In mortal & pestle,add rock sugar,crush well & set aside.
-In a blender jug,add strained raisins,soaked fennel powder along with water,crushed rock sugar,water and blend well.
-On a bowl,place a strainer,muslin cloth and strain sharbat & squeeze out completely & discard the residue.
-In a jug,add crushed ice,saunf sharbat,lemon juice,stir & serve!

-Mortal & pestle mein misri dal ker ache tarhan crush ker lein & side per rakh dein.
-Blender jug mein strained kali kishmish,soaked saunf powder pani ka saath,crushed misri aur pani dal ker ache tarhan blend ker lein.
-Bowl mein strainer aur malmal ka kapra rakh dein aur sharbat ko strain ker ka ache tarhan squeeze ker lein aur resides ko discard ker dein.
-Jug mein crushed ice,saunf sharbat aur lemon juice dal ker stir ker lein & serve karein!

Recipe in English:
Ingredients:
-Hot water 2 Cups
-Instant jelly 1 pack (80g) (flavor of your choice)
-Water 3-4 Cups
-Sabudana (Tapioca sago) ½ Cup
-Tukhme balanga (Basil seeds) 1 & ½ tbs
-Water as required
-Doodh (Milk) 3 Cups
-Lal sharbat (Rose syrup) ¼ Cup
-Condensed milk 2-3 tbs
Assembling:
-Ice cubes
-Colored jelly cubes
-Saib (Apple) peeled & sliced 1 Cup
-Strawberry sliced 1 Cup
-Banana sliced 1 Cup
-Pineapple slices 1 Cup
-Badam (Almonds) sliced ¼ Cup
Directions:
-In hot water,add instant jelly & mix well,pour in a dish,let it cool & refrigerate until set.
-Cut jelly into small cubes & set aside.
-In a kettle,add water & bring it to boil.
-Add tapioca sago,mix well & cook on medium flame for 13-14 minutes or until transparent then strain,rinse with water & set aside.
-In a cup,add basil seeds,water & let it soak for 5-6 minutes & set aside.
-In a jug,add milk,rose syrup,condensed milk,whisk well & set aside.
Assembling:
-In a jug,add ice cubes,colored jelly cubes,apple,strawberry,banana,pineapple,almonds,cooked tapioca sago,soaked basil seeds & prepared milk,mix well & serve!

-Jug mein ice cubes,yellow jelly,green jelly,red jelly,apple,strawberry,banana,pineapple,badam,cooked sabudana,soaked tukhme balanga & tayyar doodh dal ker ache tarhan mix ker lein & serve karein!
