-Elaichi powder (Cardamom powder) 1 pinch
-Desi ghee (Pure clarified butter) ½ tsp
-Dry fruit mix powder 1 tsp
-Brown sugar or Raw sugar 1 tsp or to taste
Directions:
-In pot,add semolina and roast until fragrant.
-Gradually add milk and mix well until well combined.
-Add cardamom powder and mix well.
-Add pure clarified butter,dry fruit mix powder and mix well.
-Add brown sugar or raw sugar and mix well.
-Cover and cook until desired consistency.

After making Jalebi batter let it sit for maximum10 mins, texture will be slightly changed.
Never leave batter for long and do not store it. Use batter within 10-15 mins
Dip jalebis in warm sugar syrup immediately after frying.
Dip in Sugar syrup for 5-10 seconds. Fold in syrup and take them out.

Sheera (Sugar syryp):
-Paani (Water) 1 cup
-Cheeni (Sugar) 2 cup
-Hari elaichi (Green cardamom) 2-3
-Leemo ka rus (Lemon juice) 2 tsp
For Jalebi:
-Paani (Water) lukewarm 2-3 tbs
-Cheeni (Sugar) 1 tsp
-Instant yeast ½ tsp
-Maida (Flour) 1 cup
-Orange Food color 1 tsp or as required
-Ghee melted 1 tbs
-Baisan (Gram flour) 1 tbs
-Paani (Water) as required
-Desi ghee for frying
Directions:
For Sheera (Sugar syrup):
-In pot,add water,sugar and green cardamom,mix it and cook until syrup thickens.
-In the end, add lemon juice, stir well and set aside.
-Sheera is ready.
For Jalebi:
-In lukewarm water,add sugar and instant yeast,mix & let it sit for 15 minutes.
-In bowl add flour, orange food color,ghee melted,gram flour,yeast mixture,water and make a batter of desired consistency. Let it rest for 10 minutes and consume immediately (within 10-15 minutes).
-Now pour this batter in the sneezing bottle.
-In frying pan, heat desi ghee and squeeze the bottle and make centric rings with the batter.
-When one side is cooked, turn over and fry the other side.
-After frying, immediately put the fried jalebis in the sugar syrup. The sugar syrup should be slightly warm when you add jalebis in it.
-Turn over after a minute so that both sides are coated with the syrup.
-Keep them in the sugar syrup for about 2-3 minutes.
-Remove jablebis with the help of tong and shake lightly so that excess sugar syrup.
-Jalebi is ready to serve.

Ingredients:
-Beef boneless cubes ½ kg
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Namak (Salt) 1 & ½ tsp or to taste
-Kali mirch (Black pepper) crushed 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Hari mirch (Green chili) paste 2 & ½ tbs
-Pani (Water) 1 litre or as required
-Hari moong daal (Split green lentil) ½ Cup (soaked overnight)
-Gandum (Wheat) 1 Cup (soaked overnight)
-Chawal (Rice) ½ Cup (soaked overnight)
-Pani (Water) 2 & ½ litres or as required
Prepare Kabab:
-Beef qeema (Beef mince) ½ kg
-Hari mirch (Green chili) paste 3 tbs
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Namak (Salt) 1 tsp or to taste
-Baisan (Gram flour) 4-5 tbs
-Cooking oil for frying
-Namak (Salt) 1 tsp or to taste
-Pani (Water) 2 Cups or as required
Tadka:
-Palak (Spinach) blanched 1 bunch
-Hari mirch (Green chilies) 7-8
-Desi ghee ¾ Cup
Directions:
-In pressure cooker,add beef boneless cubes,cumin seeds,salt,black pepper crushed,ginger garlic paste, green chili paste,water,mix well and bring it to boil.
-Cover and cook on medium low flame until meat is tender (approx. 40-45 minutes) then mash well,take out in a bowl & set aside.
-In pressure cooker,add split green lentil,wheat,rice,water,mix well & bring it to boil.
-Cover and cook on medium flame until tender (approx. 1 hour).
Prepare Kabab:
-In bowl,add beef mince,green chili paste,ginger garlic paste,salt and mix well.
-Add gram flour and mix until well combined.
-Grease hands with oil,take a mixture and make small kababs of equal sizes (makes 40-45).
-In frying pan,heat cooking oil and fry kababs until golden brown & set aside for later use.
-Turn off the flame and blend the mixture with the help of the blender until required consistency.
-Turn on the flame,add cooked meat and mix well.
-Add salt and mix well.
-Add water and mix well.
-Now add prepared kababs and give it a good mix.
Tadka:
-In blender,add spinach,green chilies,blend well & set aside.
-In frying pan,add desi ghee and let it melt.
-Add blended green paste and fry for 4-5 minutes.
-Now pour tadka on hareesa mixture,mix & serve!

Directions:
-In bowl,add yogurt,red chili powder,coriander powder,garam masala powder,cumin powder,salt, kashimir red chili powder,ginger garlic paste and mix well.
-Add cuts/marks on whole chicken and rub the marination all over the chicken and let it marinate for 4-6 hours or overnight in refrigerator.
-In blender,add almonds,poppy seeds,cashew nuts and blend well.
-Add fried onion and water,blend until well combined & set aside.
-Stuff the marinated chicken with cooked rice,raisins and boiled eggs and tie the whole chicken with thread and use skewers to hold the chicken together.
-In a wok,add oil and place stuffed marinated chicken and fry from all sides until golden brown and sprinkle kashmiri red chili powder and keep turning sides in between.
-Cover and cook on low flame 6-8 minutes each sides and keep changing sides in between & set aside.
-Remove excess oil,add grinded paste and mix well.
-Add yogurt and mix well.
-Add red chili powder,salt,coriander powder,cumin powder,garam masala powder and mix well for 2 minutes.
-Add water,mix well and bring it to boil and cook for 2-3 minutes.
-Add fried chicken and basting with the gravy,cover and cook on low flame until oil separates (8-10 minutes) and keep changing sides in between and basting with gravy.
-Serve with rice.

A dangerously delicious finger licking chicken nihary that is really easy and tasty!
Ing:
1 Chicken cut in 8 pieces
1 large onion Julianned
1 tbsp ginger and garlic
1 tbsp nihary masala
1 fresh lime juiced
2 tbsp white flour
1/2 cup water
salt to taste
fresh ginger Julianned for garnishing
1/4 cup canola oil (1/2 cup was a bit too much)
Method:
In a pot add the oil and fry the sliced onions till golden brown and set aside, next in the same oil add ginger and garlic, making sure you don\\\'t burn it, than add 1 tbsp of the Shan nihary masala and fry it in the oil, once it has released the flavors add the chicken and turn it so it is completely mixed with the spices, cover till the chicken is cooked. In the mean time mix the water with the flour and this will be our thickening agent for the curry, keep it aside. At this time prepare the cucumber pickle. While you are making the pickle keep an eye on the chicken turning it occasionally. Make sure not to over cook the chicken as doing this will make the chicken really tough and dry. Add the flour and water mixture in the curry and stir till it thickens up a bit. If you want more gravy add more water to it, if you want the nihary thick than don\\\'t add the extra water. Season it with salt per your taste and some fresh lime juice, do a taste test and make sure the taste is how you like it, lastly sprinkle the fried onions, fresh cilantro and ginger..

1/2 a onion julianed thin
3 to 4 small baby pickles sliced thin
1 lime juiced
1 tbsp vinegar
salt to taste
Cayenne powder (optional)
Method:
Once you have cut the onions and cucumbers add the lime juice, vinegar, salt and marinate it for at least 20 min. Add the cayenne just before serving, if you want it really spicy you can add it when you add the vinegar.

A delicious curry with whole lentils in a delicious curry infused with yummy Indian spices!
Ing:
2 cups Yellow Split Lentils soaked overnight
5 cups boiling Water
1 Cinnamon stick
7 to 8 Cloves
Boil these four ing until the lentils are tender but not mushy!
Ing needed to be pureed
1/2 of a large Onion
2 Tomatoes
puree these ingredients and keep it aside for later use
Wagaar/Making the curry
1 tbsp Olive Oil
1 tsp Mustard Seeds
1 tsp Cumin Seeds
4 to 5 Curry Leaves (tear the pieces)
1/2 tsp Turmeric
1/2 tsp Coriander Powder
1/2 tsp Mango Powder
turn off when the spices are done and keep it aside
Tomato Paste (optional) only needed to increase the reddishness of the curry
Salt to taste
fresh Coriander chopped for garnishing
Method:
Once the lentils are cooked, make sure you remove the cloves and cinnamon stick, turn your stove on and in a sauce pan add 1 tsp of olive oil and add the onion and tomato puree as well as the curry mix we had made and let cook until you think the raw flavor is gone, I added 2 table spoons of tomato paste because I didn\\\'t like the color, but this step is completely optional. Stir all the ingredients really well, add salt and do a taste test, if the taste is right for you than go ahead and add the boiled lentils, making sure you stir it gently until all the ingredients have incorporated well. Ingredients:
-Doodh (Milk) 1 litre
-Cheeni (Sugar) ½ Cup
-Hari elaichi (Cardamom) crushed 6-7
-Dry milk powder 1 Cup
-Maida (All-purpose flour) 1 tbs
-Baking powder 1 tsp
-Hari elaichi (Cardamom) seeds ½ tsp
-Ghee 1 tbs
-Anda (Egg) beaten 3 tbs
-Badam (Almonds)
-Pista (Pistachio)
Directions:
-In pot,add milk,sugar and cardamom seeds,mix well and cook until sugar is dissolved (approx.5 minutes) and set aside.
-In bowl,add dry milk powder,all-purpose flour,baking powder,cardamom seeds and mix well.
-Add ghee and mix well.
-Gradually add egg and knead until dough is formed & refrigerate for 5-8 minutes.
-Take a mixture,make a small balls of equal sizes and press it (makes 7-8).
-Heat milk and add the balls one by one,cover and cook on low flame for 10 minutes.Do not stir or use any spoon.
-Garnish with almonds and pistachio & serve chilled.

Khubani ka Meetha Recipe in English:
Ingredients:
-Sukhi khubani (Dried apricots) 200 gms (soaked overnight)
-Cheeni (Sugar) ½ Cup or to taste
-Pani (Water) ¼ Cup or as required
-Khubani ka badam (Apricot almonds)
-Doodh (Milk) 400 ml
-Cheeni (Sugar) 4 tbs or to taste
-Vanilla custard 2 & ½ tbs
-Doodh (Milk) 100 ml
-Cream for garnishing
Directions:
-Wash and soak dried apricots in enough water for overnight.
-Deseed the apricots and keep the hard kernels aside and break the kernels with the help of the cutter.
-Throw away the hard covering and keep the apricot almond side for later use.
-In pot,add sugar and soaked apricots with water and mix well until sugar dissolves.
-Cover and cook on low flame for 10-12 minutes or until apricots gets soft.
-Add water and mix well.
-Cover and cook for 2 minutes.
-Turn off the flame and blend the mixture with the help of the blender until smooth.
-Add apricot almonds,mix well & let it cool.
-In pot,add milk and sugar,whisk well and bring it to boil.
-In bowl,add vanilla custard,milk and mix well.
-In milk,gradually add dissolve custard and whisk continually & let it cool.
-In serving bowl,add cooked khubani mixture,prepared custard and garnish with cooked khubani mixture,cream,apricot almonds & serve.

-Pot mein doodh aur cheeni dal ker ache tarhan whisk karein aur ubal lein.
-Bowl mein vanilla custard aur doodh dal ker ache tarhan mix ker lein.
-Doodh mein thora thora ker ka dissolve custard shamil karein aur musalsal whisk kertay rahein & thanda ker lein.

-Add mutton mix boti and mix well until changes color.
-Add grinded onion paste,mix well and cook for 2-3 minutes.
-Cover and cook for 4-5 minutes.
-Add water,mix well and bring it to boil,cover and cook on low flame for 25-30 minutes or until meat is tender then cook on high flame until oil separates.
-Add green chilies,fresh coriander and ginger,cover and let it simmer for 2 minutes.

-Pani (Water) 1 Cup or as required
-Cooking oil 2 tsp
-Baking soda 1 pinch
-Yellow food color 1-2 drops
-Green food color 1-2 drops
-Red food color 1-2 drops
-Cooking oil for frying
-Cheeni (Sugar) 1 & ½ Cup
-Pani (Water) 3/4 Cup
Directions:
-In bowl,add gram flour,gradullay add water and whisk until smooth batter is formed.
-Add cooking oil,baking soda and whisk again.
-Divide the batter into three equal portion.
-Add yellow color,green color,red color and whisk well & set aside.
-Heat cooking oil in a wok,hold perforated spoon (a big round spoon with multiple small holes in it) and pour prepared batter on the spoon.Tap its edges so the droplets of batter fall in the cooking oil.
-Repeat the same process and fry on medium flame until crispy.
-In wok,add sugar and water,mix well and cook until sugar is dissolved and syrup is thick.
-Put fried boondiyan in warm sugar syrup and mix well,cover and let it soak for 4-6 hours until sugar syrup is completely absorbed by boondi & serve!

-In a pot,add dried plums,tamarind pulp,red chilli crushed,fennel seeds,carom seeds,black salt,salt and water,mix well & bring it to boil,cover & cook on medium flame for 2-3 minutes.
-Turn off the flame and blend well with the help of blender.
-Turn on the flame,add sugar,red chilli powder,ginger powder,cooking oil,mix well & cook for a minute.
-In cornflour,add water and whisk well.
-Gradually add dissolved cornflour,mix well & cook on medium until thickens (1-2 minutes).
-Let it cool.
-Store in clean & sterilized jar for 1 month in fridge.
Kashmiri Lal Mirch & Tamatar Chutney: 02:46
-Deseed soaked dried Kashmiri red chillies.
-In a blender jug,add Kashmiri red chillies,tomatoes,garlic,lemon juice,water & blend well.
-In a pot,add cooking oil,tomatoes & chilli paste,mix well & bring it to boil.
-Add salt,cumin seeds & mix well,cover & cook on medium flame until thickens (3-4 minutes).
-Let it cool.

-Now add dissolved cornflour,mix well and cook on medium flame until thickens (2-3 minutes).
-Let it cool.

-In a jug,add warm water,sugar,instant yeast & mix well,cover & let it rest for 4-5 minutes & set aside.
-In a bowl,add all-purpose flour,salt,baking soda & mix well.
-Add yogurt,cooking oil & mix well until it crumbles.
-Add yeast mixture & mix well.
-Gradually add milk & knead until soft dough is formed.
-Add cooking oil and knead again,cover & let it proof for 1 & ½ hour at warm place.
-Sprinkle dry flour,stretch & knead dough for 2-3 minutes then divide the dough into 6 portions.
-Make a small dough (130g),sprinkle dry flour & roll out dough in oval shape with the help of rolling pin.
-Make gashes with the help of finger tips,flip the naan & apply salt water on the other side of naan.
-Heat iron griddle,place naan (wet side down) and cook on low flame until it starts to bubble and bottom turns brown then flip the griddle and cook top side on direct flame until it’s charred.
Prepare Chicken:
-In a bowl,add red chilli powder,salt,onion powder,black pepper powder,paprika powder,garlic powder,dried oregano & mix well.
-Add chicken,mix well & set aside.
-In a frying pan,add cooking oil,chicken,mix well and cook for 2-3 minutes,cover & cook on low flame for 4-5 minutes then cook on high flame until oil separates & set aside.
Assembling:
-Place naan on a pizza rack.
-Add & spread pizza sauce,add cooked chicken,onion,tomato,pickled jalapenos,mozzarella cheese,cheddar cheese,dried oregano & red chilli crushed (makes 6).
-In a pot,place steam stand/wire rack,cover & preheat on medium flame for 15 minutes.
-Place naan pizza on rack,cover & bake in pot on medium flame until cheese melts (5-6 minutes).
-Cut into slices & serve!

-Iron tawa garam karein aur naan (wet side down) ko halki ancch per paka lein yahan tak ka bubbles ajayen aur bottom se brown ho jaye phir tawa ko flip karein aur top side ko directly chulay per charred hunay tak paka lein.

-Frying pan mein cooking oil aur chicken dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein aur dhak ker halki ancch per 4-5 minutes kliya paka lein phir tez ancch per oil alag ho janay tak paka lein & side per rakh dein.
Assembling:
-Pizza rack per naan rakh dein.
-Pizza sauce dal ker pheela lein,cooked chicken,pyaz,tamatar,pickled jalapenos,mozzarella cheese,cheddar cheese,dried oregano & lal mirch crushed dal dein (makes 6).
-Pot mein stream stand/wire rack rakh dein aur dhak ker darmiyani ancch per 15 minutes kliya preheat ker lein.
-Rack per pizza naan rakh dein aur dhak ker darmiyani ancch per cheese melt ho janay tak pot bake ker lein (5-6 minutes).
-Slices mein cut ker ka serve karein!
