Shahi Baingan Curry Recipe in English:
Ingredients:
-Kaju (Cashew nuts) 13-14
-Sabut dhania (Coriander seeds) 1 tsp
-Laung (Cloves) 6-7
-Zeera (Cumin seeds) 1 tsp
-Oil 1 tbs
-Pyaz (Onion) chopped 1 medium
-Adrak (Ginger) 1 inch piece
-Lehsan (Garlic) cloves 4
-Tamatar (Tomato) chopped 1 large
-Pani (Water) ½ Cup or as required
-Baingan (Eggplant) ½ kg
-Oil ¼ Cup
-Dhania powder (Coriander powder) 1 tsp
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Garam masala powder ½ tsp
-Haldee powder (Turmeric powder) ½ tsp
-Hari mirch (Green chilies) chopped 2-3
-Pani (Water) ½ Cup or as required
-Kali mirch (Black pepper) crushed 1 tsp
-Hara dhania (Fresh coriander) chopped
Directions:
-In small frying pan,add cashew nuts,coriander seeds,cloves,cumin seeds and roast until fragrant & let it cool.
-In spice mixer,add roasted spices and blend well to make a fine powder & set aside.
-In frying pan,add oil,onion and mix well.
-Add ginger,garlic and mix well.
-Add tomatoes,mix well and cook until tomatoes are soft.
-In blender jug,add cooked tomatoes+onion mixture and water,blend to make a smooth paste & set aside.
-Cut eggplants into cubes and dip into water & set aside.
-In pot,add oil,egg plants,coriander powder,red chili powder,salt,garam masala powder,turmeric powder and green chilies,mix well and cook for 5 minutes.
-Now add prepared grinded tomato & onion paste,ground spices and mix well.
-Add water and mix well.
-Cover and cook on low flame for 15-20 minutes.
-Add black pepper crushed and fresh coriander,cover and let it simmer for 2 minutes & serve.

-Frying pan mein oil aur pyaz dal ker ache tarhan mix ker lein.
-Adrak aur lehsan dal ker ache tarhan mix karein.
-Tamatar dal ker ache tarhan mix karein aur tamatar naram hunay tak paka lein.
-Blender jug mein cooked tamatar+pyaz mixture aur pani dal ker ache tarhan blend ker ka smooth paste tayyar ker lein & side per rakh dein.
-Baingan ko cubes mein cut ker lein aur pani mein dal ker side per rakh dein.
-Pot mein oil,baingan,dhania powder,lal mirch powder,namak,garam masala powder,haldee powder aur hari mirch dal ker ache tarhan mix karein aur 5 minutes kliya paka lein.
-Ab is mein tayyar grinded tamatar & pyaz ka paste aur ground spices dal ker ache tarhan mix ker lein.
-Pani shamil karein aur ache tarhan mix ker lein.
-Dhak dein aur halki ancch per 15-20 minutes kliya paka lein.
-Kali mirch crushed aur hara dhania dal dein aur 2 minutes kliya dum per rakh dein & serve karein.

-Zeera (Cumin seeds) roasted & crushed ½ tsp
-Mustard powder 1 & ½ tsp

-Pani (Water) ½ Cup or as required
-Imli ka pulp (Tamarind pulp) 2 tbs
-Pyaz (Onion) 1 large
-Hari mirch (Green chilies) 1-2

-Curry pata (Curry leaves) 8-10
-Tamatar (Tomatoes) blanched 4 medium
-Sufi cooking oil ¼ Cup

Directions:
-Cut chicken fillets into cubes then wash & pat dry and set aside.
-In bowl,add coriander powder,red chili powder,turmeric powder,paprika powder,cumin seeds,mustard powder,salt,water and mix well.
-Add tamarind pulp,mix well & set aside.
-In blender jar,add onion,green chili,garlic,ginger,curry leaves,blend well & set aside.
-Remove skin of blanched tomatoes.
-In grinder,add tomatoes and grind to make a puree & set aside.
-In pot,add sufi cooking oil,blended onion mixture and cook for 5 minutes.
-Add chicken boneless cubes,mix well until changes color and fry until light golden.
-Add grinded tomato puree,mix well and cook for 6-8 minutes.
-Now add prepared spices mixture,mix well and bring it to boil.
-Add fresh coriander,cover and cook on low flame for 8-10 minutes.
-Garnish with fresh coriander & serve!

-Add ginger garlic paste and mix well.
-Add red chili powder and mix well.
-Now add pureed tomatoes & onion,mix well and cook for 2-3 minutes.
-Add turmeric powder,salt,kashmiri red chili powder,coriander powder,cumin powder,garam masala powder,gram flour,cashew powder,chicken powder,mix well and cook for 4-5 minutes.
-Add dried fenugreek leaves,fresh coriander and mix well.
-Add water,mix well and bring it to boil,cover and cook on low flame for 8-10 minutes.
-Add cottage cheese cubes and mix gently.
-Cover and cook on low flame for 4-5 minutes.
-Turn off the flame,add cream and mix well.

-Falak Pink Salt 1 tsp or to taste
-Cooking oil 1 tbs
-Cooking oil 1 tsp
Assembling:
-Hara dhania (Fresh coriander) chopped
-Podina (Mint leaves) chopped
-Pyaz (Onion) fried
-Hari mirch (Green chillies) 3-4
-Anday ki zardi (Egg yolk) 1
-Doodh (Milk) 2 tbs
-Til (Sesame seeds) white & black
Directions:
-In a bowl,add rice,water,wash thoroughly & soak for 20 minutes then strain soaked rice & set aside.
Prepare Mince Balls:
-In a chopper,add chicken,ginger garlic paste,green chillies,fried onion,all-purpose flour,coriander seeds,pink salt,cumin powder,fresh coriander & chop well.
-Grease hands with cooking oil,take small quantity of mixture (10g),make balls of equal sizes (makes 48-50).
-In boiling water,add prepared mince balls & bring it to boil,cover & cook on medium flame for 3-4 minutes then strain mince balls & set aside.Reserve stock water for later use.
-In a frying pan,add cooking oil & fry mince balls on medium flame until golden & set aside.
-In the same frying pan,add cooking oil,almonds & fry on medium flame for 2 minutes & reserve for later use.
Prepare Pulao:
-In a bowl,add coriander seeds,fennel seeds,cumin seeds,mix well & set aside.
-In a pot,add clarified butter & let it melt.
-Add black cardamom,cinnamon sticks,black peppercorns,green cardamom,star anise,cloves & mix well.
-Add tomatoes & mix well.
-Add ginger garlic paste,mix well & cook for a minute.
-Add green chilli paste,fried onion,mix well & cook until tomatoes are soft.
-Add yogurt,prepared spices,pink salt,mix well & cook on medium flame for 2-3 minutes.
-Add lemon juice,mix well & cook until oil separates.
-Add stock cubes & mix well.
-Reserve 1/3rd gravy masala for layering.
-In remaining gravy masala,add reserved stock water,mix well & bring it to boil.
-Add soaked rice,mix well & bring it to boil,cover & steam cook on low flame until 80% done & set aside.
Prepare Dough:
-In a jug,add lukewarm water,sugar,instant yeast & mix well,cover & let it proof for 5 minutes.
-In a bowl,add all-purpose flour,pink salt & mix well.
-Add cooking oil & mix well until it crumbles.
-Gradually add yeast mixture,mix well & knead until dough is formed.
-Add cooking oil & knead again,cover & let it proof for 1 hour (warm place).
-Sprinkle dry flour & knead dough again until smooth.
-Sprinkle dry flour & roll out with the help of rolling pin.
Assembling:
-On a bowl,place rolled dough,add fried mince balls,reserved gravy masala,fried almonds,cooked rice,fresh coriander,mint leaves,fried onion,green chillies,cooked rice & press gently,fold the edges to close then flip on baking tray.
-In egg yolk,add milk & whisk well.
-Apply on dough with the help of brush & sprinkle sesame seeds.
-Bake in preheated oven at 180C for 15 minutes (on both grills).
-Carefully cut the dough & serve with raita or salad.

Murgh Masallam Recipe in English:
Ingredients:
-Dahi (Yogurt) 2 tbs
-Lal mirch powder (Red chili powder) 1 tbs or to taste
-Dhania powder (Coriander powder) roasted & crushed 1 tbs
-Garam masala powder 1 tsp
-Zeera powder (Cumin powder) roasted ½ tbs
-Namak (Salt) 1 tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilies) powder ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Whole chicken 1 kg approx.
-Badam (Almonds) ½ Cup
-Khashkhash (Poppy seeds) 2 tbs
-Kaju (Cashew nuts) 14-15
-Pyaz (Onion) fried 2 medium
-Pani (Water) ½ Cup or as required
-Cooked rice
-Kishmish (Raisins) 1 tbs
-Anday (Eggs) hard boiled 2
-Oil 1 & ½ Cups
-(Kashmiri red chilies) powder ½ tsp or as required
-Dahi (Yogurt) whisked 1 Cup
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) ½ tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Zeera powder (Cumin powder) 1 tsp
-Garam masala powder ½ tsp
-Pani (Water) ½ Cup or as required
Directions:
-In bowl,add yogurt,red chili powder,coriander powder,garam masala powder,cumin powder,salt, kashimir red chili powder,ginger garlic paste and mix well.
-Add cuts/marks on whole chicken and rub the marination all over the chicken and let it marinate for 4-6 hours or overnight in refrigerator.
-In blender,add almonds,poppy seeds,cashew nuts and blend well.
-Add fried onion and water,blend until well combined & set aside.
-Stuff the marinated chicken with cooked rice,raisins and boiled eggs and tie the whole chicken with thread and use skewers to hold the chicken together.
-In a wok,add oil and place stuffed marinated chicken and fry from all sides until golden brown and sprinkle kashmiri red chili powder and keep turning sides in between.
-Cover and cook on low flame 6-8 minutes each sides and keep changing sides in between & set aside.
-Remove excess oil,add grinded paste and mix well.
-Add yogurt and mix well.
-Add red chili powder,salt,coriander powder,cumin powder,garam masala powder and mix well for 2 minutes.
-Add water,mix well and bring it to boil and cook for 2-3 minutes.
-Add fried chicken and basting with the gravy,cover and cook on low flame until oil separates (8-10 minutes) and keep changing sides in between and basting with gravy.
-Serve with rice.

-In mixer,add roasted spices and grind to make a fine powder.
-In bowl,add grinded spices,rose water and kewra water,mix well & set aside.
-Grate onions with the help of the grater and squeeze excess moisture with the help of the muslin cloth & set aside.
-In chopper,add ginger,garlic,green chilies,fresh coriander,raw papaya and chop well.
-Add beef mince (must be dried),salt,red chili powder,chaat masala,coconut milk powder,grinded spices,squeeze onion and chop until well combined.
-Add beef fat and chop well & refrigerate for 2-24 hours.
-Grease your hands with oil,take a mixture and make a kebabs onto the wooden & metal skewers and tie the kebabs with a kitchen thread.
Option no.1: In grill pan,add oil and fry kebabs from all sides,cover & steam cook for 2-3 minutes.
-Give a coal smoke for 2 minutes.

Directions:
-Boil eggs with salt until hard and remove the shells.
-Cut eggs into two halves and separates egg yolks & egg whites.
-In bowl,add egg yolks,yogurt,mustard paste,lemon juice,mixed herbs,salt and black pepper powder,mix well.
-Add pickled jalapenos,onion,fresh coriander and mix well.
-Chop egg whites and add in bowl and give it a good mix.

Ingredients:
-Oil 1-2 tbs
-Qeema (Mince) 250 gms (Beef/mutton)
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Hari mirch (Green chilies) chopped 3-4
-Dhania (Coriander seeds) roasted & crushed ½ tbs
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Lal mirch (Red chili) crushed ½ tbs
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Hara dhania (Fresh coriander) chopped ½ Cup
-Pyaz (Onion) chopped 200 gms
-Maida (All-purpose flour) 2 tbs
-Pani (Water) 1 tbs or as required
-Samosa patti/Manda patti
-Cooking oil for frying
Directions:
-In frying pan,add oil,mince and mix well until changes color.
-Add ginger garlic paste,green chilies,coriander seeds,red chili powder,salt,red chili crushed and cumin seeds,mix well and cook for 4-5 minutes.
-Add fresh coriander and mix well.
-Add onion and mix well for 2 minutes.
-Let it cool down.
-In small bowl,add all-purpose flour,water and mix well to make a smooth paste & set aside.
-Take samosa patti/manda patti and make pocket,add filling in the center and roll into the shape of samosa and seal corners with all-purpose flour & water paste.
-Similarly make other samosas (makes 15-16).
-In wok,heat cooking oil and fry samosa until golden brown.
-Can be freeze in air tight container for up to 1 month.

-Cover and cook on low flame for 5-6 minutes then cook on high flame for 2-3 minutes & set aside.
-In pot,add corn oil,green cardamom,black cardamom,black peppercorns,cloves,cinnamon sticks,bay leaves and mix.
-Add coriander powder,red chili powder,garam masala powder,black pepper powder,mix well and cook for 2 minutes.
-Add tomatoes and mix well.
-Add yogurt and mix well.
-Now add cooked chicken mixture,mix well and cook for 4-5 minutes.
-Add fresh coriander,mint leaves,green chilies,mix well and cook on high flame until oil separates.
-Add dried plums and mix well.
-Take out half of the chicken mixture in a bowl and set aside.
-Add fried onion,boiled rice,remining chicken gravy,fried onion,biryani masala,lemon slices and remaining boiled rice.
-In kewra water,add yellow food color and mix well.
-Add dissolve food color,fried onion,cover and steam cook on low flame for 10-12 minutes.

Directions:
Prepare Aloo Tikki:
-In bowl,add peas,split Bengal gram,cumin seeds,chaat masala,red chili powder,green chili,salt,fresh coriander,mint leaves and mix well then mash slightly & set aside.
-In bowl,grate potatoes with the help of the grater.
-Add corn flour,rice flour,salt and mix until well combined.
-Grease hands with oil and take a mixture,make a ball and flatten the ball with the help of the hand.
-Add prepared filling in the center then press and seal all edges to make a kabab (makes 8-10).
-In frying pan,add cooking oil and fry kababs from both sides until golden brown.
Prepare Green Chutney:
-In chopper,add garlic,mint leaves,fresh coriander,green chilli,salt,cumin seeds,yogurt and blend until well combined.
Prepare Meethi Chutney:
-In saucepan,add sugar,jaggery,dried mango powder,Kashmiri red chili powder,black salt,cumin seeds, garam masala powder,red chili powder,salt and water,mix well and bring it to boil and cook on low flame for 5 minutes.
Assembling:
-On serving plate,place aloo tikki,boiled chickpeas,red chutney,yogurt,green chutney,tomato,onion, yogurt,meethi chutney,nimco sev & serve!

● Take a bowl add maida,atta,salt, 1 tsp oil mix well then add water to make a soft dough rest it for 10min.
● Now in another bowl,take onions chopped,poha,chilli powder,cumin powder,green chillis chopped,oriander ,chat masala mix well.
● In a small bowl add 1tsp of maida mix with some water and make a paste keep a side.
● Now take the dough make a thin chapaties and take a pan slightly cook the chapatis both the sides do not cook more.
● Once chapaties are ready cut the chapati sheets into long triangle shape.

Directions:
-In bowl,add yogurt,red chili powder,salt,turmeric powder,coriander powder,garam masala powder,lemon juice and mix well.
-Add chicken boneless cubes,mix well and marinate for 30 minutes.
-In pot,add oil and marinated chicken,mix well and cook until chicken is done & set aside.
-In pot,add butter and let it melt,add cinnamon stick,green cardamom,onion,ginger garlic,green chili and sauté until onion are translucent.
-Add grinded tomato,tomato paste and mix well,cover and cook for 4-5 minutes.
-Add cumin seeds,salt,turmeric powder,nutmeg powder,paprika powder and sugar,mix well and cook for 2 minutes.
-Add water and mix well.
-In bowl,add cream,milk and whisk well.
-In pot,gradually add cream+milk and mix well.
-Now add cooked chicken and mix well.
-Add dried fenugreek leaves and mix well.
-Garish with butter,cream & serve.

-Maida (All-purpose flour) 1 & ½ tbs
-Pyaz (Onion) grinded 1 Cup
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Mutton boneless cubes ½ kg
-Dahi (Yogurt) whisked 1 Cup
-Namak (Salt) 1 tsp or to taste
-Garam masala powder 1 tbs
-Pani (Water) 2-3 Cups or as required
-Tamatar (Tomato) sliced 1 medium
-Hara dhania (Fresh coriander) chopped
-Anda (Egg) whisked 1
-Oil (hot) ½ Cup
Directions:
-In grinder,add green chilies,cashew nuts,poppy seeds and water,grind to make a paste & set aside.
-In pot,add ghee and let it melt.
-Add cumin seeds and mix.
-Add all-purpose flour and mix well for 2 minutes.
-Add grinded onion and mix well.
-Add ginger garlic paste,mix well and cook for 4-5 minutes.
-Add mutton and mix well until changes color.
-Add yogurt,ground paste and mix well.
-Add salt and garam masala powder,mix well and cook for 2-3 minutes.
-Add water,mix well and bring it to boil.
-Cover and cook on medium low flame until meat is tender (20-25 minutes).
-In serving dish,add cooked meat,tomato slices,fresh coriander and pour beaten egg and hot oil.
-Microwave for 1-2 minutes & serve!

-Cream cheese 6 tbs
-Mozzarella cheese grated 2 & ½ Cups
-Kali mirch (Black pepper) crushed 1 tsp
-Lehsan powder (Garlic powder) 1 tsp
-Namak (Salt) ½ tsp or to taste
-Safed mirch powder (White pepper powder) ½ tsp
-Hara dhania (Fresh coriander) chopped ¼ Cup
-Maida (All-purpose flour) ½ Cup or as required
-Bread crumbs ½ Cup as required
-Paprika powder 1 tsp
-Dried parsley 1 & ½ tsp
-Anday (Eggs) 2
-Doodh (Milk) ¼ Cup
-Oil for frying
Directions:
-In bowl,add chicken,cream cheese,mozzarella cheese,black pepper crushed,garlic powder,salt,white pepper powder,fresh coriander and mix well.
-On working place,place butter paper and spread mixture evenly.
-Cover and keep in freezer for 2-3 hours.
-After freezing,remove butter paper and cut into equal sizes of sticks or bars (makes 24).
-In bowl,add all-purpose flour and set aside.
-In bread crumbs,add paprika powder,dried parsley and mix well.
-In eggs,add milk and whisk well.
-Now coat sticks in all-purpose flour,dip into beaten eggs and coat in bread crumbs,again dip into beaten eggs then coat in bread crumbs.
-Can be freeze for up to 1 month in air-tight container.
-In wok,heat oil and fry on low flame until golden brown.

-Add water and grind to make a thick & smooth batter.
-Grease griddle with oil,pour prepared batter and spread evenly (makes 4-5).
-Add cooking oil and cook from both sides on low flame until light golden.
Pineapple & Tomato Chutney:
-In frying pan,add cooking oil,ginger and mix well.
-Add tomatoes,pineapples and mix well.
-Add red chili crushed,salt,nigella seeds,sugar,tomato ketchup,mix well and cook for 2-3 minutes.
-Add water and mix,cover and cook on low flame for 6-8 minutes then mash with the help of the help of the masher.
-Cover and cook on low flame for 4-5 minutes.
-Add lemon juice and mix well.
-Add water and mix well.
-In corn flour,add water and mix well.
-Gradually add dissolve corn flour,mix well and cook until it thickens.
-Let it cool.
