Murgh Masallam Recipe in English:
Ingredients:
-Dahi (Yogurt) 2 tbs
-Lal mirch powder (Red chili powder) 1 tbs or to taste
-Dhania powder (Coriander powder) roasted & crushed 1 tbs
-Garam masala powder 1 tsp
-Zeera powder (Cumin powder) roasted ½ tbs
-Namak (Salt) 1 tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilies) powder ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Whole chicken 1 kg approx.
-Badam (Almonds) ½ Cup
-Khashkhash (Poppy seeds) 2 tbs
-Kaju (Cashew nuts) 14-15
-Pyaz (Onion) fried 2 medium
-Pani (Water) ½ Cup or as required
-Cooked rice
-Kishmish (Raisins) 1 tbs
-Anday (Eggs) hard boiled 2
-Oil 1 & ½ Cups
-(Kashmiri red chilies) powder ½ tsp or as required
-Dahi (Yogurt) whisked 1 Cup
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) ½ tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Zeera powder (Cumin powder) 1 tsp
-Garam masala powder ½ tsp
-Pani (Water) ½ Cup or as required
Directions:
-In bowl,add yogurt,red chili powder,coriander powder,garam masala powder,cumin powder,salt, kashimir red chili powder,ginger garlic paste and mix well.
-Add cuts/marks on whole chicken and rub the marination all over the chicken and let it marinate for 4-6 hours or overnight in refrigerator.
-In blender,add almonds,poppy seeds,cashew nuts and blend well.
-Add fried onion and water,blend until well combined & set aside.
-Stuff the marinated chicken with cooked rice,raisins and boiled eggs and tie the whole chicken with thread and use skewers to hold the chicken together.
-In a wok,add oil and place stuffed marinated chicken and fry from all sides until golden brown and sprinkle kashmiri red chili powder and keep turning sides in between.
-Cover and cook on low flame 6-8 minutes each sides and keep changing sides in between & set aside.
-Remove excess oil,add grinded paste and mix well.
-Add yogurt and mix well.
-Add red chili powder,salt,coriander powder,cumin powder,garam masala powder and mix well for 2 minutes.
-Add water,mix well and bring it to boil and cook for 2-3 minutes.
-Add fried chicken and basting with the gravy,cover and cook on low flame until oil separates (8-10 minutes) and keep changing sides in between and basting with gravy.
-Serve with rice.

-Whole chicken per cuts/marks laga lein aur chicken per ache tarhan marination laga lein aur 4-6 hours or overnight kliya refrigerator mein marinate ker lein.
-Blender mein badam,khashkhash aur kaju dal ker ache tarhan blend ker lein.
-Fried pyaz aur pani dal ker ache tarhan blend karein & side per rakh dein.
-Marinated chicken mein cooked chawal,kishmish aur boiled anday bhar dein aur whole chicken ko dhaagay aur skewers ko madad sa tie ker lein.
-Karhai mein oil dal dein aur stuffed marinated chicken ko tamam sides sa golden brown hunay tak fry ker lein aur kashmiri lal mirch powder sprinkle kertay rahein aur chicken ki sides ko tabdeel kertay rahein.
-Dhak dein aur halki ancch per 6-8 minutes kliya paka lein aur bech bech mein chicken ki sides tabdeel kertay rahein & side per rakh dein.
-Excess oil ko nikal lein aur grinded paste dal ker ache tarhan mix ker lein.
-Dahi shamil karein aur ache tarhan mix ker lein.
-Lal mirch powder,namak,dhania powder,zeera powder aur garam masala powder dal ker 2 minutes kliya ache tarhan mix ker lein.
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad 2-3 minutes kliya paka lein.
-Fried chicken rakh dein aur gravy dal dein,dhak ker halki ancch per oil alag hunay tak paka lein (8-10 minutes) aur bech bech mein chicken ki sides tabdeel kertay rahien aur gravy daltey rahien.
-Chawal ka saath serve karein.

-Baingan (Eggplant) ½ kg
-Oil ¼ Cup
-Dhania powder (Coriander powder) 1 tsp
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Garam masala powder ½ tsp
-Haldee powder (Turmeric powder) ½ tsp
-Hari mirch (Green chilies) chopped 2-3

Directions:
-In small frying pan,add cashew nuts,coriander seeds,cloves,cumin seeds and roast until fragrant & let it cool.
-In spice mixer,add roasted spices and blend well to make a fine powder & set aside.
-In frying pan,add oil,onion and mix well.
-Add ginger,garlic and mix well.
-Add tomatoes,mix well and cook until tomatoes are soft.
-In blender jug,add cooked tomatoes+onion mixture and water,blend to make a smooth paste & set aside.
-Cut eggplants into cubes and dip into water & set aside.
-In pot,add oil,egg plants,coriander powder,red chili powder,salt,garam masala powder,turmeric powder and green chilies,mix well and cook for 5 minutes.
-Now add prepared grinded tomato & onion paste,ground spices and mix well.
-Add water and mix well.
-Cover and cook on low flame for 15-20 minutes.
-Add black pepper crushed and fresh coriander,cover and let it simmer for 2 minutes & serve.

-Baingan ko cubes mein cut ker lein aur pani mein dal ker side per rakh dein.
-Pot mein oil,baingan,dhania powder,lal mirch powder,namak,garam masala powder,haldee powder aur hari mirch dal ker ache tarhan mix karein aur 5 minutes kliya paka lein.

Serves 8-10
Recipe in English:
Ingredients:
-Beef boneless cubes ½ kg
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Namak (Salt) 1 & ½ tsp or to taste
-Kali mirch (Black pepper) crushed 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Hari mirch (Green chili) paste 2 & ½ tbs
-Pani (Water) 1 litre or as required
-Hari moong daal (Split green lentil) ½ Cup (soaked overnight)
-Gandum (Wheat) 1 Cup (soaked overnight)
-Chawal (Rice) ½ Cup (soaked overnight)
-Pani (Water) 2 & ½ litres or as required
Prepare Kabab:
-Beef qeema (Beef mince) ½ kg
-Hari mirch (Green chili) paste 3 tbs
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Namak (Salt) 1 tsp or to taste
-Baisan (Gram flour) 4-5 tbs
-Cooking oil for frying
-Namak (Salt) 1 tsp or to taste
-Pani (Water) 2 Cups or as required
Tadka:
-Palak (Spinach) blanched 1 bunch
-Hari mirch (Green chilies) 7-8
-Desi ghee ¾ Cup
Directions:
-In pressure cooker,add beef boneless cubes,cumin seeds,salt,black pepper crushed,ginger garlic paste, green chili paste,water,mix well and bring it to boil.
-Cover and cook on medium low flame until meat is tender (approx. 40-45 minutes) then mash well,take out in a bowl & set aside.
-In pressure cooker,add split green lentil,wheat,rice,water,mix well & bring it to boil.
-Cover and cook on medium flame until tender (approx. 1 hour).
Prepare Kabab:
-In bowl,add beef mince,green chili paste,ginger garlic paste,salt and mix well.
-Add gram flour and mix until well combined.
-Grease hands with oil,take a mixture and make small kababs of equal sizes (makes 40-45).
-In frying pan,heat cooking oil and fry kababs until golden brown & set aside for later use.
-Turn off the flame and blend the mixture with the help of the blender until required consistency.
-Turn on the flame,add cooked meat and mix well.
-Add salt and mix well.
-Add water and mix well.
-Now add prepared kababs and give it a good mix.
Tadka:
-In blender,add spinach,green chilies,blend well & set aside.
-In frying pan,add desi ghee and let it melt.
-Add blended green paste and fry for 4-5 minutes.
-Now pour tadka on hareesa mixture,mix & serve!

-Frying pan mein cooking oil garam karein aur kababs ko golden brown hunay tak fry ker lein aur bad mein use kernay kliya side per rakh dein.
-Chulha bund ker dein aur mixture ko blender ki madad sa required consistency anay tak blend ker lein.
-Chulha on karein,cooked meat shamil karein aur ache tarhan mix ker lein.
-Namak dal ker mix karein.
-Pani dal ker ache tarhan mix ker lein.
-Ab tayyar kababs dal dein aur mix ker lein.
Tadka:
-Blender mein palak aur hari mirch dal ker ache tarhan blend ker lein & side per rakh dein.
-Frying pan mein desi ghee dal ker melt karein.
-Blended green paste dal ker 4-5 minutes kliya fry ker lein.

-In a blender jug,add button red chillies,garlic,cumin seeds,salt,citric acid,water & blend well.
-In a wok,add cooking oil,red chillies & garlic paste,mix well & cook for a minute.
-Add water,mix well & bring it to boil,cover & cook on medium flame for 3-4 minutes.
-Let it cool.
-Store in clean & sterilized jar for 2 weeks in fridge.

-In a pot,add dried plums,tamarind pulp,red chilli crushed,fennel seeds,carom seeds,black salt,salt and water,mix well & bring it to boil,cover & cook on medium flame for 2-3 minutes.
-Turn off the flame and blend well with the help of blender.
-Turn on the flame,add sugar,red chilli powder,ginger powder,cooking oil,mix well & cook for a minute.
-In cornflour,add water and whisk well.
-Gradually add dissolved cornflour,mix well & cook on medium until thickens (1-2 minutes).
-Let it cool.
-Store in clean & sterilized jar for 1 month in fridge.
Kashmiri Lal Mirch & Tamatar Chutney: 02:46
-Deseed soaked dried Kashmiri red chillies.
-In a blender jug,add Kashmiri red chillies,tomatoes,garlic,lemon juice,water & blend well.
-In a pot,add cooking oil,tomatoes & chilli paste,mix well & bring it to boil.
-Add salt,cumin seeds & mix well,cover & cook on medium flame until thickens (3-4 minutes).
-Let it cool.

1/3 tsp garlic powder
1/3 tsp onion powder
6 oz jarred jalapeno peppers and the juice
16 oz pack of frozen spinach (squeezed dry)
Method:
Start by putting the cream cheese in a food processor then add the jalapeno peppers and the juice blend it a little then go ahead and add the lemon pepper, onion powder, and the garlic powder as well as the squeezed spinach, blend all the ingredients one more time till everything has combined. Do a taste test to make sure it is perfect for you, spread on crackers, sandwiches , or just use it as a dip for vegetables and pretzels!

Khubani ka Meetha Recipe in English:
Ingredients:
-Sukhi khubani (Dried apricots) 200 gms (soaked overnight)
-Cheeni (Sugar) ½ Cup or to taste
-Pani (Water) ¼ Cup or as required
-Khubani ka badam (Apricot almonds)
-Doodh (Milk) 400 ml
-Cheeni (Sugar) 4 tbs or to taste
-Vanilla custard 2 & ½ tbs
-Doodh (Milk) 100 ml
-Cream for garnishing
Directions:
-Wash and soak dried apricots in enough water for overnight.
-Deseed the apricots and keep the hard kernels aside and break the kernels with the help of the cutter.
-Throw away the hard covering and keep the apricot almond side for later use.
-In pot,add sugar and soaked apricots with water and mix well until sugar dissolves.
-Cover and cook on low flame for 10-12 minutes or until apricots gets soft.
-Add water and mix well.
-Cover and cook for 2 minutes.
-Turn off the flame and blend the mixture with the help of the blender until smooth.
-Add apricot almonds,mix well & let it cool.
-In pot,add milk and sugar,whisk well and bring it to boil.
-In bowl,add vanilla custard,milk and mix well.
-In milk,gradually add dissolve custard and whisk continually & let it cool.
-In serving bowl,add cooked khubani mixture,prepared custard and garnish with cooked khubani mixture,cream,apricot almonds & serve.

-In bowl,add peas,split Bengal gram,cumin seeds,chaat masala,red chili powder,green chili,salt,fresh coriander,mint leaves and mix well then mash slightly & set aside.
-In bowl,grate potatoes with the help of the grater.
-Add corn flour,rice flour,salt and mix until well combined.
-Grease hands with oil and take a mixture,make a ball and flatten the ball with the help of the hand.
-Add prepared filling in the center then press and seal all edges to make a kabab (makes 8-10).
-In frying pan,add cooking oil and fry kababs from both sides until golden brown.

-In saucepan,add sugar,jaggery,dried mango powder,Kashmiri red chili powder,black salt,cumin seeds, garam masala powder,red chili powder,salt and water,mix well and bring it to boil and cook on low flame for 5 minutes.

-On serving plate,place aloo tikki,boiled chickpeas,red chutney,yogurt,green chutney,tomato,onion, yogurt,meethi chutney,nimco sev & serve!

Directions:
Prepare Spice Mix:
-In a spice mixer,add coriander seeds,fennel seeds,cumin seeds,red chilli powder,salt,citric acid & black salt,blend to make powder & set aside.
-In a wok,add puffed rice & dry roast on medium flame until crispy (approx. 3-4 minutes).
-Let it cool.
-In a bowl,add roasted puffed rice,cucumber,onion,chickpeas,tomato,potato,green chilli,ginger,nimco mix,pickled oil,prepared spice mix,fresh coriander,lemon juice & mix well.
-Sprinkle prepared spice mix,lemon juice & serve!

-Thanda ker lein.
-Bowl mein roasted murmuray,kheera,pyaz,safed chanay,tamatar,aalo,hari mirch,adrak,nimco mix, achar ka tail,tayyar spice mix,hara dhania aur lemon juice dal ker ache tarhan mix ker lein.
-Tayyar spice mix aur lemon juice dal ker serve karein!

Saunf Sharbat
Serves 8-10
Recipe in English:
Ingredients:
-Saunf (Fennel seeds) ¼ Cup
-Water hot 1 Cup
-Kali kishmish (Black raisins) ¼ Cup
-Water hot 1 Cup
-Misri (Rock sugar) ¼ Cup or as required
-Water 1 litre
-Ice crushed as required
-Lemon juice 2 tbs
Directions:
-In grinder,add fennel seeds and grind to make powder.
-Transfer to a bowl,add hot water,mix well & let it soak it for 1 hour.
-In a bowl,add black raisins,hot water,mix well and let it soak for 1 hour.
-In mortal & pestle,add rock sugar,crush well & set aside.
-In a blender jug,add strained raisins,soaked fennel powder along with water,crushed rock sugar,water and blend well.
-On a bowl,place a strainer,muslin cloth and strain sharbat & squeeze out completely & discard the residue.
-In a jug,add crushed ice,saunf sharbat,lemon juice,stir & serve!

-Bowl mein strainer aur malmal ka kapra rakh dein aur sharbat ko strain ker ka ache tarhan squeeze ker lein aur resides ko discard ker dein.
-Jug mein crushed ice,saunf sharbat aur lemon juice dal ker stir ker lein & serve karein!

A blend of red kidney beans and yellow corn with a crunch of an apple all tossed together to make a quick healthy salad or side dish...
Recipe:
2 cans of red kidney beans
2 cans of sweet corn
1 apple (tart)
2 cups of baby cucumber
1 1/2 cup of sour cream
1/2 cup mayonnaise
salt to taste
black pepper to taste
Method:
To a big bowl add the corn, kidney beans, apples, and cucumbers and toss, make sure you splash it with lemon juice as to make sure the apple don't discolor. Mix the sour cream and mayonnaise together until well blended, season with salt and pepper. Lastly mix everything together and toss!!! Chill for at least 2 hours and enjoy!!!
Sprinkle with more black pepper if you choose!!!!

Grilled chicken in a rich, creamy coconut curry and smoked with barbecue flavor!!!
Recipe:
1 Whole Chicken cut and cleaned
1tbsp fresh ginger
1tbsp fresh garlic
1tbsp salt
fresh pepper to taste
Marinate the chicken in the above ingredients and put it in a 400 degree preheated oven for 35 min. Make sure chicken is cooked through, turn the broiler on to 550 and broil the chicken until it is charbroiled at your satisfaction, while the chicken is in the oven make the curry.
Curry ingredients:
1 med onion
3 fresh roma tomatoes
2 mild or hot jalapenos upon your taste
1 tbs turmeric powder
1/2 tbsp of salt
dried parsley for garnish
1 cup heavy whipping cream
1 13.4 oz can of coconut milk
Italian parsley chopped for garnish
1 charcoal used to smoke the curry (optional)
Method:
Put 2 tbsp olive oil in a sauce pan, while that gets warm put the diced onion, diced tomatoes, diced jalapenos and the whipping cream in the blender and blend until everything is blended well, than pour the paste in the sauce pan and cook for about a minute. Sprinkle the turmeric in there as well as 1/2 tsp of salt, make sure you do a taste test, This would be a good time to put the charcoal on the stove so its fully lighted by the time your curry is ready. Check on the chicken if the chicken is cooked through turn the broiler on and charbroil the chicken and add it to the coconut curry then put the charcoal on the foil and add a little olive oil and cover the sauce pan, depending on how strong you want the barbecue flavor to be will determine on how long you leave the charcoal in the curry. Finally sprinkle with fresh and dried parsley
