-Bund gobhi (Cabbage) shredded
-Tamatar (Tomato) deseeded & strips
-Shimla mirch (Capsicum) deseeded & strips

Directions:
-In chicken boneless cubes,red chili powder,turmeric powder,coriander powder,cumin seeds,salt,yellow food color,ginger garlic paste,raw papaya paste,green chilies and yogurt,mix well and marinate for 2 hours.
-In frying pan,add oil and marinated chicken,mix well for 2-3 minutes,cover and cook on low flame for 5-6 minutes then cook on high flame until water dries up.
-On burger bun,spread mayonnaise,add cooked chicken,tomato ketchup,cabbage,tomato,capsicum, mayonnaise,tomato ketchup and cover with top bun & serve.

-Frying pan mein oil aur marinated chicken dal ker 2-3 minutes kliya ache tarhan mix karein aur dhak ker halki ancch per 5-6 minutes kliya paka lein phir tez ancch per pani sukh janay tak paka lein.
-Burger bun per mayonnaise laga ker cooked chicken,tomato ketchup,bund gobhi,tamatar,shimla mirch, mayonnaise aur tomato ketchup dal ker top bun sa cover ker lein & serve karein.

-Adrak lehsan paste (Ginger garlic paste) 2 tsp
-Fish boneless cubes 500 gms
-Lemon juice 3 tbs
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Dhania (Coriander seeds) roasted & crushed 1 tsp
-Lal mirch powder (Red chili powder) 1 & ½ tsp or to taste
-Curry powder 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Namak (Salt) 1 & ½ tsp or to taste
-Tomato paste 2 tbs
-Aloo (Potatoes) boiled 250 gms
-Hara dhania & Podina (Fresh coriander & Mint leaves) chopped ½ Cup
-Pickled jalapenos finely chopped 2 tbs
-Anday (Eggs) 2
-Pani (Water) ¼ Cup
-Bread crumbs ½ Cup or as required
-Paprika powder 1 tsp
-Maida (All-purpose flour) ½ Cup or as required
-Oil for frying
Directions:
-In frying pan,add oil,onion,ginger garlic paste and mix well.
-Add fish and mix well.
-Add lemon juice,cumin seeds,coriander seeds,red chili powder,curry powder,turmeric powder and salt, mix well and cook for 2-3 minutes.
-Add tomato paste,mix well and cook until it dries up & let it cool.
-In bowl,add potatoes and mash well.
-Add cooked fish mixture,fresh coriander & mint leaves,pickled jalapenos.
-Grease your hand with oil and mix well.
-Take a mixture and make a shape of croquettes.
-In eggs,add water and whisk well.
-In bread crumbs,add paprika powder and mix well.
-Now coat fish croquettes in all-purpose flour,dip into beaten egg then coat in bread crumbs.
-In wok,heat oil and fry croquettes until golden brown.

-Aloo (Potatoes) peeled ½ kg
-Ice cold water
-Makhan (Butter) 2 tbs
-Chawal ka atta (Rice flour) 2 tbs
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Onion powder 1 tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Corn flour 1 tbs
-Cheddar cheese grated 3 tbs
-Oil for frying
Directions:
-Grate potatoes with the help of grater.
-Add grated potatoes in ice cold water for 10 minutes then drain and squeeze out completely with the help of muslin cloth and set aside.
-In wok,add butter and let it melt,add grated & squeeze potatoes,mix well and cook on medium flame for 4-5 minutes & let it cool down.
-Now add rice flour,red chili powder,salt,onion powder,black pepper powder,corn flour and cheddar cheese,mix well and let it rest for 5 minutes.
-Grease your hands with oil,take a mixture and make oval shape of equal sizes.
-In frying pan,heat oil and fry until golden brown.

-Bread crumbs 1 Cup
-Dried parsley 1 tbs
-Anday (Eggs) 2
-Doodh (Milk) ¼ Cup
-Maida (All-purpose flour) ½ Cup
-Corn flour ¼ Cup
-Kali mirch (Black pepper) powder ½ tsp
-Namak (Salt) ½ tsp
-Oil for frying
Directions:
-In chopper,add fresh coriander,mint leaves,green chilies,bread slices and chop well.
-Add chicken,black pepper powder,salt,garlic paste,egg and chop until well combined and refrigerate for 30 minutes.
-If mixture is too soft,add bread slices or if the mixture is too hard,add milk.
-In bowl,add bread crumbs and dried parsley,mix well & set aside.
-In bowl,add eggs and milk,whisk well & set aside.
-In bowl,add all-purpose flour,corn flour,black pepper powdersalt and mix well.
-Grease your hands with oil,take a mixture and make a ball.

-Badam (Almonds) ¾ Cup
-Pista (Pistachio) ½ Cup
-Kaju (Cashew nuts) ½ Cup
-Saunf (Fennel seeds) 2 tsp
-Sonth (Dried ginger) ½ inch piece
-Hari elaichi seeds (Green cardamom seeds) powder ½ tsp
-Brown sugar or Raw sugar ½ Cup (optional)
-Jaifil (Nutmeg) powder ½ tsp
Directions:
-In frying pan,add almonds,pistachio,cashew nuts and roast for 2 minutes.
-Add fennel seeds and roast for 1 more minute & let it cool down.
-In mixer,add roasted nuts,dried ginger and green cardamom seeds powder,grind well until fine powder (in batches) & take out in airtight jar.
-In mixer,add brown sugar or raw sugar and grind well & take out in airtight jar.
-Add nutmeg powder and mix well.
-Let it cool completely then store in airtight container.
-Can be serve with porridge,yogurt,cererals,milk,smoothies,shakes,desserts & sweets.
Important instructions:
For babies above 10 months and toddlers, start with adding ¼ TSP & slowly increase it to 1 TSP.

Chicken Filling:
-Oil 2-3 tbs
-Pyaz (Onion) chopped 1 medium
-Chicken boneless cubes 1 Cup
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Dahi (Yogurt) whisked 4 tbs
-Garam masala powder ½ tsp
-Haldee powder (Turmeric powder) ½ tsp
-Lal mirch (Red chili) powder ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Lal mirch (Red chili) crushed ½ tsp
-Namak (Salt) ½ tsp or to taste
Sweet Nuts & Cinnamon:
-Brown sugar grinded 6 tbs or to taste
-Akhrot (Walnuts) chopped ¼ Cup
-Badam (Almonds) chopped ¼ Cup
-Pista (Pistachio) chopped ¼ Cup
-Darchini powder (Cinnamon powder) 1 & ½ tsp
Cheese & Vegetable:
-Cheddar cheese grated ½ Cup
-Mozzarella cheese grated ½ Cup
-Pyaz (Onion) chopped 1 small
-Shimla mirch (Capsicum) cubes ¼ Cup
-Tamatar (Tomato) deseeded & cubes ¼ Cup
-Kali mirch powder (Black pepper powder) ¼ tsp
-Lal mirch (Red chili) crushed ¼ tsp
-Namak (Salt) ¼ tsp or to taste
-Dried oregano ¼ tsp
-Oil as required
Directions:
Prepare Dough:
-In small jug,add instant yeast,sugar,warm water and mix well,cover and let it rest for 15 minutes.
-In all-purpose flour,add salt,oil and mix well.
-Now add yeast mixture and mix well.
-Gradually add warm water and knead until dough is formed,cover and let it rest for 2-3 hours or overnight in refrigerator.
-Grease your hands with oil and knead dough again until smooth.Dough is ready.
Chicken Filling:
-In frying pan,add oil and onion,fry until translucent.
-Add chicken and mix well until it changes color.
-Add ginger garlic paste,yogurt,garam masala powder,turmeric powder,red chili powder,cumin powder, red chili crushed and salt,mix well.
-Cover and cook on for 4-5 minutes then cook on high flame until it’s dry & set aside.
Sweet Nuts & Cinnamon:
-In bowl,add brown sugar,walnuts,almonds,pistachio,cinnamon powder and mix well & set aside.
Cheese & Vegetable:
-In bowl,add cheddar cheese,mozzarella cheese,onion,capsicum,tomato,black pepper powder,red chili crushed,salt and dried oregano,mix well & set aside.
-Grease hands with oil and take a dough,make a ball and press & spread it.
-In the center of the dough,add brown sugar filling,press and seal all edges and make a ball again.
-In the center of the dough,add cooked chicken filling,press and seal all edges and make a ball again.

-In frying pan,add oil and stuffed filled doughs & press down to form a flat round and fry from both sides.

-Makhan (Butter) salted 3tbs
-Cheeni (Sugar) 1 Cup or to taste
-Baking soda ¼ tsp
Directions:
-In frying pan,add sesame seeds and roast until fragrant and set aside.
-In frying pan,add butter and let it melt,add sugar,mix continuously until sugar melts.
-Add baking soda and mix well.
-Switch off the flame,add roasted sesame seeds and mix until well combined then transfer sesame mixture on the cutting board and roll out with the help of rolling pin.
-Cut into desired shapes and let it cool & serve.

-Makhan (Butter) unsalted 1 Cup (250 gms) (Room temperature)
-Cheeni (Sugar) grinded 3/4 Cup (80 gms)
-Anday ki zardi (Egg yolks) large 3
-Vanilla essence ½ tbs
-Cocoa powder 4 tbs
-Strawberry jam
-Cooking chocolate
-Pista (Pistachio) & Badam (Almonds) chopped
-Chocolate ganache
Directions:
-In bowl,place sifter,add all-purpose flour,corn flour,salt and sift together,mix well and set aside.
-In bowl,add butter and beat until fluffy.
-Add sugar and mix with the help of the spatula then beat until well combined.
-Add egg yolks and beat well.
-Add vanilla essence and beat again.
-Gradually add sifted flour mixture and mix gently until well combined.
-Now divide the dough into two equal portions.
-Cover yellow dough with cling film and refrigerate for 15-20 minutes.
-Add cocoa powder in the second portion and mix until well combined.
-Cover brown dough with cling film and refrigerate for 15-20 minutes.
-Flatten the yellow dough and roll out with the help of rolling pin.
-Cut into desired shapes with the help of the cookie cutter.
-Make a slightly deep impression in the center of the dough and add jam.
-For jam filling cookies,take a small dough and make a ball,make a hole in the center and slightly press it.
-Now fill the center hole with the strawberry jam.
-Take a small dough and make a ball,make a hole in the center,add cooking chocolate,make a ball again and add marks with the help of the fork.
-Take a small dough and knead it with chopped pistachios & almonds,make a small ball again and press in cookie cutter to make a round shape,add pistachios and press it.
-For Checker board cookies,take a brown dough,cut into small pieces and roll out lengthwise with the help of the hand.
-Take a yellow dough,cut into small pieces and roll out lengthwise with the help of the hand.
-Now place yellow and brown bars together and apply milk over them.
-Place another yellow and brown bars alternatively to create a checker board effect,cover with cling film and gently press the bars together.
-Let it refrigerate for 10-15 minutes.
-Cut with the help of the knife into thick slices.
-Take a brown dough and make a ball,place cling film and roll out with the help of rolling pin.
-Cut into desired shapes with the help of the cookie cutter.
-On baking tray,place butter paper and all prepared cookies.
-Bake in preheated oven at 180 C for 10-12 minutes.
-Remove baking tray from oven and let cookies cool for 2 minutes.
-Transfer cookies to a wire rack to cool completely.
-Pipe in chocolate ganache & serve.

-In bowl,add egg whites,sugar,vanilla essence,salt and beat until fluffy.
-Add desiccated coconut and fold gently with the help of spatula.
-On baking tray,place butter paper and brush oil.
-Take a small portions of mixture and space them an inch or so apart on the baking tray.
-Bake in preheated oven at 160 C for 15-16 minutes.
-Let the macaroons cool on the baking tray for 5 minutes then transfer to a wire rack to cool completely. -Macaroons can be kept in an airtight container for up to a week.

Recipe in English:
Ingredients:
-Falsay (Grewia) washed ½ Kg
-Pani (Water) 1 Cup
-Cheeni (Sugar) 1 kg
-Pani (Water) 1 litre
-Lemon juice ¼ Cup
-Kala namak (Black salt) 1 & ½ tbs
-Falsa sharbat (Grewia syrup) 2 tbs or to taste
-Ice cubes
-Pani (Water) chilled 1 Cup
Directions:
-In pot,add grewia and water,mix well and cook for 5 minutes.
-Cover and cook on low flame until soft (5-6 minutes).
-Now mash well with masher then strain with the help of the strainer by adding little water in between, discard seeds & set aside.
-In wok,add sugar and water,mix well and cook until sugar is dissolved and continue cook until syrup thickens.
-Now add cooked grewia pulp,mix well and cook on medium low flame for 2-3 minutes.
-Add lemon juice,black salt and mix well,bring it to boil and cook for 5-6 minutes.
-Let it cool down.
-Can be stored in refrigerator for up to a month (yields 1.5 litres).
-In serving glass,add grewia syrup,ice cubes and water.
-Stir & serve.

-Maida (All-purpose flour) 1 Cup or as required
Directions:
-In bowl,add chicken boneless cubes,paprika powder,garlic powder,salt,black pepper powder,onion powder and red chili powder,mix well and let it marinate for 15 minutes.
-In zip lock,add corn flakes and crush coarsely with the help of the rolling pin.
-In bowl,add crushed corn flakes.
-In bowl,add eggs,milk and whisk well.
-Now coat marinated chicken pieces in all-purpose flour then dip into beaten eggs and coat in crushed corn flakes.

-Safed mirch powder (White pepper powder) ½ tsp
-Hara dhania (Fresh coriander) chopped ¼ Cup
-Maida (All-purpose flour) ½ Cup or as required
-Bread crumbs ½ Cup as required
-Paprika powder 1 tsp
-Dried parsley 1 & ½ tsp
-Anday (Eggs) 2
-Doodh (Milk) ¼ Cup
-Oil for frying
Directions:
-In bowl,add chicken,cream cheese,mozzarella cheese,black pepper crushed,garlic powder,salt,white pepper powder,fresh coriander and mix well.
-On working place,place butter paper and spread mixture evenly.
-Cover and keep in freezer for 2-3 hours.
-After freezing,remove butter paper and cut into equal sizes of sticks or bars (makes 24).
-In bowl,add all-purpose flour and set aside.
-In bread crumbs,add paprika powder,dried parsley and mix well.
-In eggs,add milk and whisk well.
-Now coat sticks in all-purpose flour,dip into beaten eggs and coat in bread crumbs,again dip into beaten eggs then coat in bread crumbs.

Al Quds Day is the day to stand for this noble cause.

-Curry pata (Curry leaves) 8-10
-Tamatar (Tomatoes) blanched 4 medium
-Sufi cooking oil ¼ Cup

-Hara dhania (Fresh coriander) chopped
Directions:
-Cut chicken fillets into cubes then wash & pat dry and set aside.
-In bowl,add coriander powder,red chili powder,turmeric powder,paprika powder,cumin seeds,mustard powder,salt,water and mix well.
-Add tamarind pulp,mix well & set aside.
-In blender jar,add onion,green chili,garlic,ginger,curry leaves,blend well & set aside.
-Remove skin of blanched tomatoes.
-In grinder,add tomatoes and grind to make a puree & set aside.
-In pot,add sufi cooking oil,blended onion mixture and cook for 5 minutes.
-Add chicken boneless cubes,mix well until changes color and fry until light golden.
-Add grinded tomato puree,mix well and cook for 6-8 minutes.
-Now add prepared spices mixture,mix well and bring it to boil.
-Add fresh coriander,cover and cook on low flame for 8-10 minutes.
-Garnish with fresh coriander & serve!

-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Namak (Salt) 1 & ½ tsp or to taste
-Kali mirch (Black pepper) crushed 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Hari mirch (Green chili) paste 2 & ½ tbs
-Pani (Water) 1 litre or as required
-Hari moong daal (Split green lentil) ½ Cup (soaked overnight)
-Gandum (Wheat) 1 Cup (soaked overnight)
-Chawal (Rice) ½ Cup (soaked overnight)
-Pani (Water) 2 & ½ litres or as required
Prepare Kabab:
-Beef qeema (Beef mince) ½ kg
-Hari mirch (Green chili) paste 3 tbs
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Namak (Salt) 1 tsp or to taste
-Baisan (Gram flour) 4-5 tbs
-Cooking oil for frying
-Namak (Salt) 1 tsp or to taste
-Pani (Water) 2 Cups or as required
Tadka:
-Palak (Spinach) blanched 1 bunch
-Hari mirch (Green chilies) 7-8
-Desi ghee ¾ Cup
Directions:
-In pressure cooker,add beef boneless cubes,cumin seeds,salt,black pepper crushed,ginger garlic paste, green chili paste,water,mix well and bring it to boil.
-Cover and cook on medium low flame until meat is tender (approx. 40-45 minutes) then mash well,take out in a bowl & set aside.
-In pressure cooker,add split green lentil,wheat,rice,water,mix well & bring it to boil.
-Cover and cook on medium flame until tender (approx. 1 hour).
Prepare Kabab:
-In bowl,add beef mince,green chili paste,ginger garlic paste,salt and mix well.
-Add gram flour and mix until well combined.
-Grease hands with oil,take a mixture and make small kababs of equal sizes (makes 40-45).
-In frying pan,heat cooking oil and fry kababs until golden brown & set aside for later use.
-Turn off the flame and blend the mixture with the help of the blender until required consistency.
-Turn on the flame,add cooked meat and mix well.
-Add salt and mix well.
-Add water and mix well.
-Now add prepared kababs and give it a good mix.
Tadka:
-In blender,add spinach,green chilies,blend well & set aside.
-In frying pan,add desi ghee and let it melt.
-Add blended green paste and fry for 4-5 minutes.
-Now pour tadka on hareesa mixture,mix & serve!

-Baisan dal dein aur ache tarhan mix ker lein.
-Haathon ko oil sa grease karein aur mixture ko la ker ek jaisay sizes ka chotay kababs tayyar ker lein (makes 40-45).
-Frying pan mein cooking oil garam karein aur kababs ko golden brown hunay tak fry ker lein aur bad mein use kernay kliya side per rakh dein.
-Chulha bund ker dein aur mixture ko blender ki madad sa required consistency anay tak blend ker lein.
-Chulha on karein,cooked meat shamil karein aur ache tarhan mix ker lein.
-Namak dal ker mix karein.
-Pani dal ker ache tarhan mix ker lein.
-Ab tayyar kababs dal dein aur mix ker lein.
Tadka:
-Blender mein palak aur hari mirch dal ker ache tarhan blend ker lein & side per rakh dein.
-Frying pan mein desi ghee dal ker melt karein.
-Blended green paste dal ker 4-5 minutes kliya fry ker lein.
-Tadka ko hareesa ka mixture mein dal mix ker lein & serve karein.
