Bangladeshi Mutton Tahiri
Serves 5-6
Recipe in English:
Ingredients:
-Darchini (Cinnamon sticks) 2
-Hari elaichi (Green cardamom) 3
-Badi elaichi (Black cardamom) 2
-Laung (Cloves) 4-5
-Sabut kali mirch (Black peppercorns) 10-12
-Shahi zeera (Caraway seeds) ½ tsp
-Jaifil (Nutmeg) 1/4 piece
-Javatri (Mace) ½ piece
-Dahi (Yogurt) 3 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Dhania powder (Coriander powder) 1 & ½ tsp
-Lal mirch powder (Red chili powder) ½ tbs or to taste
-Namak (Salt) 1 tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Mutton mix boti ½ kg
-Cooking oil 1/4 Cup
-Pyaz (Onion) sliced 1 medium
-Hari mirch (Green chillies) 4
-Pani (Water) ½ Cup or as required
-Cooking oil 3-4 tbs
-Pyaz (Onion) sliced 1 small
-Hari mirch (Green chillies) 2-3
-Chawal (Rice) basmati 2 Cup (soaked)
-Garam pani (Hot water) 2 Cups or as required
-Namak (Salt) ½ tsp or to taste
Directions:
-In spice mixer,add cinnamon sticks,green cardamom,black cardamom,cloves,black peppercorns, caraway seeds,nutmeg,mace and grind to make a powder & set aside.
-In bowl,add yogurt,ginger garlic paste,coriander powder,red chili powder,salt,cumin powder,ground spices and whisk well.
-Add mutton mix boti,mix well and marinate for 1 hour.
-In pot,add cooking oil,onion and fry until light golden.
-Add green chillies and mix well.
-Now add marinated mutton and mix well.
-Add water and mix,cover and cook on low flame until tender (approx. 40-50 minutes).
-In pot,add cooking oil,onion and fry until light golden.
-Add green chillies and mix.
-Add rice and mix well.
-Now add cooked mutton gravy and mix well.
-Add hot water,salt and mix well.
-Cover and steam cook on low flame for 18-20 minutes & serve!

-Hari mirch dal ker ache tarhan mix karein.
-Ab marinated mutton dal ker ache tarhan mix ker lein.
-Pani dal ker dhak dein aur halki ancch per gosht gul janay tak paka lein (approx. 40-50 minutes).
-Pot mein cooking oil aur pyaz dal dein aur light golden hunay tak fry ker lein.

-Chawal dal ker ache tarhan mix ker lein.

-Chicken boneless cubes ½ kg
-Paprika powder 1 tsp
-Lehsan powder (Garlic powder) 1 tsp
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Onion powder 1 tsp
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Corn flakes 1 Cup or as required
-Anday (Eggs) 2
-Doodh (Milk) 2 tbs
-Maida (All-purpose flour) 1 Cup or as required
Directions:
-In bowl,add chicken boneless cubes,paprika powder,garlic powder,salt,black pepper powder,onion powder and red chili powder,mix well and let it marinate for 15 minutes.
-In zip lock,add corn flakes and crush coarsely with the help of the rolling pin.
-In bowl,add crushed corn flakes.
-In bowl,add eggs,milk and whisk well.
-Now coat marinated chicken pieces in all-purpose flour then dip into beaten eggs and coat in crushed corn flakes.
Option # 1: To Bake
-On baking tray,place butter paper and coated chicken pieces.
-Bake in preheated oven at 180 C for 15 minutes.
Option # 2: To Air Fry
-In air fryer machine,place coated chicken pieces and air fry at 180 C for 10 minutes or deep fry until golden brown.

-Dahi (Yogurt) strained ½ Cup
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Tandoori masala 3 tbs
-Cooking oil 1 tbs
-Mutton shank ½ kg
Directions:
-In bowl,add yogurt,ginger garlic paste,tandoori masala,cooking oil and whisk well.
-Add mutton shank and mix well,cover and marinate for 4-6 hour in refrigerator.
-On aluminum foil,place marinated mutton pieces with remaining marinade and fold all edges.
-On baking tray,place folded aluminum foil pieces and bake in preheated oven at 150 C for 1 hour.
-Take out from oven,open the foil and again bake uncovered in preheated oven at 180 C for 25-30 minutes.

-Cooking oil for frying
Directions:
-In chopper,add chicken boneless cubes and chop well.
-In bowl,add chicken mince,paprika powder,garlic powder,salt,black pepper powder,white pepper powder,onion powder,fresh parsley/fresh coriander and mix until well combined.
-Add cheddar cheese,mix well & refrigerate for 10 minutes.
-In a bowl,add breadcrumbs,dried oregano,paprika powder,shake well & set aside.

Veggie pops are excellent snack made with a mix of vegetables made into dumplings coated with bread crumbs and deep fried until crisp.
Oil 2 tb Beans 2tb Carrot 2tb
Green peas 2 tb Cauliflower 2 tb Corn 2 tb Salt
Mixed herb 1 ts salt
Pepper powder ½ ts
Spinach chopped ½ cup
Semolina ½ cup
Water 1 cup
All purpose flour 1 cup
Bread crumb ½ cup
Curry powder ½ ts
Heat oil in a pan add chopped bean, carrot, green peas, cauliflower, corn, sauté it and add salt, mixed herb, pepper powder, chopped spinach and add hot water, semolina mix it and put the lid on cook it in a slow flame for 4 to 5 minutes. After that sprinkle some curry powder cook it for 2 minutes and switch off the flame and add the all purpose flour and mix it well and make a dumplings.
Take some all purpose flour, in this drop the veggie dumplings to coat them and dip all the coated veggie pops in to the hot boiling water and again coat the all purpose flour mixture then dip it into the hot water and again in the bread crumbs then deep fry in the hot oil.
Serve this hot with favorite sauce.

Directions:
Prepare Chicken Shawarma:
-In small bowl,add cumin powder,clove powder,cardamom powder,red chili powder,onion powder, garlic powder,black pepper powder,cinnamon powder,paprika powder,mix well & set aside.
-In bowl,add yogurt,lemon juice,salt,3 tbs of prepared spice mix and whisk well.
-Add chicken fillets,mix well and marinate for 30 minutes.
-In frying pan,add cooking oil and fry marinated fillets from both sides until done (approx. 4-5 minutes each side).
Prepare Tahini Sauce:
-In bowl,add yogurt,lemon juice,tahini paste,paprika powder,black pepper crushed,salt,dried parsley, garlic powder,whisk well & set aside.
Prepare Salad:
-In bowl,add yogurt,mayonnaise,cream,lemon juice,black pepper crushed,garlic powder,salt and whisk well.
-Add tomato,onion,lettuce leaves,cabbage,cucumber and mix well,cover and refrigerate until use.
Prepare Rice:
-In pot,add cooking oil,butter and let it melt.
-Add onion and sauté until translucent.
-Now add remaining prepared spice mix,soaked rice and mix well for 2-3 minutes.
-Add water,salt,mix well and bring it boil then cook on high flame until water is reduced.
-Cover and steam cook on low flame for 8-10 minutes.
-Cut chicken fillets into pieces.
-On serving plate,add cooked rice,chicken piece,salad and drizzle prepared sauce & serve!

-Ab remaining prepared spice mix aur soaked chawal dal ker 2-3 minutes kliya ache tarhan mix karein.
-Pani aur namak dal ker ache tarhan mix karein aur ubal anay dein phir tez ancch per pani reduce hunay tak paka lein.
-Dhak dein aur halki ancch per 8-10 minutes kliya paka lein.

When it comes to the vegetarian dishes the Malabar parathas takes the top position. These layered flakey flat bread just melts away in your mouth. This is one bread which demands ultimate patience and care while in process. This is made of maida and tastes excellent with Veg Korma or any gravy.

2 cup maida

Directions
Take a bowl add maida salt mix well then add water and make into soft dough and rest for 5 min
take the rested dough knead well for 2min then rest it again for 5 min
Now take the rested dough divide into equal portions and make into balls by applying oil to hands and keep aside for 3-4min
Now take the rested balls and flat the dough by applying oil on the base and make into thin sheets and apply on top of the sheet and sprinkle flour and fold as shown in the video and rest for 2-3min
now take the rested folded dough and roll like chapati and cook on both the sides by applying oil.
remove the parata from tawa and with both the hands just push the paratha with both the hands so that the layers comes out.

-Ice cold water
-Makhan (Butter) 2 tbs
-Chawal ka atta (Rice flour) 2 tbs
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Onion powder 1 tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Corn flour 1 tbs
-Cheddar cheese grated 3 tbs
-Oil for frying
Directions:
-Grate potatoes with the help of grater.
-Add grated potatoes in ice cold water for 10 minutes then drain and squeeze out completely with the help of muslin cloth and set aside.
-In wok,add butter and let it melt,add grated & squeeze potatoes,mix well and cook on medium flame for 4-5 minutes & let it cool down.
-Now add rice flour,red chili powder,salt,onion powder,black pepper powder,corn flour and cheddar cheese,mix well and let it rest for 5 minutes.
-Grease your hands with oil,take a mixture and make oval shape of equal sizes.
-In frying pan,heat oil and fry until golden brown.

-In frying pan,add sesame seeds and roast until fragrant and set aside.

-Add baking soda and mix well.
