Iran tests radars on 3rd day of drills
Iran's military has entered the third day of its biggest ever nationwide air drills, with testing radar capabilities in defending the country's territory.
The anti-air defense units from Iran's Armed Forces and the Islamic Revolution Guards Corps (IRGC) are taking part in the five-day air defense maneuvers dubbed Defenders of Velayat Skies, which began on Tuesday.
According to the spokesman for the military drills Brigadier Hamid Arzhangi, various kinds of fixed and mobile radars that have been domestically manufactured or refurbished would be tested during the third day of the drills on Thursday.
He further explained that radars would be used to detect and identify objects and pass relevant data to the operational units.
The military official added that all types of the country's radar systems, which would relay intelligence to the unified command and control network of the central headquarters, would be utilized and examined during the third day of the maneuvers.
He pointed out that reconnaissance missions to detect state-of-the-art systems of theatrical enemies using radars were also on the agenda of the third day of drills.
During the second day of the maneuvers on Wednesday, advanced equipment used for communication and exchange of intelligence along with modern electro-optical systems were successfully tested and utilized.
The air maneuvers are being held near Iran's strategic sights and landmarks, aiming to assess performance of new air defense systems and enhance rapid response capabilities in countering potential aerial attacks.
Iranian military officials say the drills convey a message of peace and friendship to neighboring countries and a fierce warning against enemies.
Iran simulates Electronic Warfare in drills
An Iranian commander says the Air Force has "analyzed and conducted" Electronic Warfare (EW) missions during the first three days of its biggest defense drills.
"EW means jamming the enemies' electronic systems, equipment, and capabilities and the mission of this war is to seize and control electromagnetic fields," Colonel Moharam Qolizadeh said on Thursday.
"We have analyzed and conducted EW missions in the drills [dubbed] 'Modafean Aseman Velayt 3' (Guardians of Velayati Skies)," he added.
The colonel said the maneuvers were aimed at "spotting [the enemy] without being spotted" and tapping the enemy communications lines without compromising transmissions by Iranian forces.
Earlier on Thursday, the spokesman for the military drills Brigadier General Hamid Arzhangi said Iran had successfully tested a new generation of its first domestically-manufactured air defense system during the third day of the nationwide air drills.
The Mersad (Ambush) modern medium-range system is capable of spotting and destroying advanced aircraft at low and high altitudes.
In addition to its high mobility, Mersad's new generation can be used in electronic warfare and can be networked with other radar and defense systems, Arzhangi added.
The forces were also set to test various models of fixed and mobile radars that have been domestically manufactured or refurbished.

Iran's Islamic Revolution Guards Corps' (IRGC) has begun its military drill, the Great Prophet 7, by firing indigenously made missiles at hypothetical enemy bases.
On Tuesday, IRGC's long, medium and short-range missiles targeted "simulations of the trans-regional forces' airbases" in the northern Semnan Desert.
The domestically-produced missiles include Shahab (Meteor) 1, 2, 3, Khalij Fars (Persian Gulf), Tondar (Lightning), Fateh (Victor) and Zelzal (Quake) as well as Qiam (Uprising).
Iran's Foreign Ministry Spokesman Ramin Mehmanparast says the ongoing drill in the central sector of the country is intended to convey a message of sovereignty and full preparedness to establish security in the Persian Gulf as well as the Strait of Hormuz.

The Karrar UAV is capable of carrying a military payload of rockets to carry out bombing missions against ground targets. It is also capable of flying long distances at a very high speed.

The two hi-tech drones named 'Ra'd' (Thunder) and 'Nazir' (Harbinger) are capable of performing long-range reconnaissance, patrolling, assault and bombing missions with high precision.
Ra'd, a UAV especially designed for assault and bombing missions, has the capability to destroy specific targets with high precision.
Tehran established an arms development program during the 1980-88 war that Iraq waged against Iran to counter the weapons embargo imposed on it by the US and its Western allies. Since 1992, Iran has manufactured its own tanks, armored personnel carriers, missiles and fighter planes.
Iran successfully tested a home-made radar-evading UAV with bombing capabilities in June 2009.
In 2008, the Islamic Republic's Defense Industries launched production lines of two home-built fighter jets, namely Saeqeh (Thunderbolt) and Azarakhsh (Lightening).

This new laser beam guided missile can target low flying objects and ground targets. -Gradually add dissolved cornflour,mix well & cook on medium until thickens (1-2 minutes).
-Let it cool.

Prepare Dough:
-Lukewarm water 1 & ½ Cup
-Sugar 2 & ½ tsp
-Khameer (Instant yeast) 1 & ½ tsp
-Maida (All-purpose flour) sifted 3 Cups

-Hara dhania (Fresh coriander) chopped
-Podina (Mint leaves) chopped
-Pyaz (Onion) fried

-Anday ki zardi (Egg yolk) 1
-Doodh (Milk) 2 tbs
-Til (Sesame seeds) white & black
Directions:
-In a bowl,add rice,water,wash thoroughly & soak for 20 minutes then strain soaked rice & set aside.
Prepare Mince Balls:
-In a chopper,add chicken,ginger garlic paste,green chillies,fried onion,all-purpose flour,coriander seeds,pink salt,cumin powder,fresh coriander & chop well.
-Grease hands with cooking oil,take small quantity of mixture (10g),make balls of equal sizes (makes 48-50).
-In boiling water,add prepared mince balls & bring it to boil,cover & cook on medium flame for 3-4 minutes then strain mince balls & set aside.Reserve stock water for later use.
-In a frying pan,add cooking oil & fry mince balls on medium flame until golden & set aside.
-In the same frying pan,add cooking oil,almonds & fry on medium flame for 2 minutes & reserve for later use.
Prepare Pulao:
-In a bowl,add coriander seeds,fennel seeds,cumin seeds,mix well & set aside.
-In a pot,add clarified butter & let it melt.
-Add black cardamom,cinnamon sticks,black peppercorns,green cardamom,star anise,cloves & mix well.
-Add tomatoes & mix well.
-Add ginger garlic paste,mix well & cook for a minute.
-Add green chilli paste,fried onion,mix well & cook until tomatoes are soft.
-Add yogurt,prepared spices,pink salt,mix well & cook on medium flame for 2-3 minutes.
-Add lemon juice,mix well & cook until oil separates.
-Add stock cubes & mix well.
-Reserve 1/3rd gravy masala for layering.
-In remaining gravy masala,add reserved stock water,mix well & bring it to boil.
-Add soaked rice,mix well & bring it to boil,cover & steam cook on low flame until 80% done & set aside.
Prepare Dough:
-In a jug,add lukewarm water,sugar,instant yeast & mix well,cover & let it proof for 5 minutes.
-In a bowl,add all-purpose flour,pink salt & mix well.
-Add cooking oil & mix well until it crumbles.
-Gradually add yeast mixture,mix well & knead until dough is formed.
-Add cooking oil & knead again,cover & let it proof for 1 hour (warm place).
-Sprinkle dry flour & knead dough again until smooth.
-Sprinkle dry flour & roll out with the help of rolling pin.
Assembling:
-On a bowl,place rolled dough,add fried mince balls,reserved gravy masala,fried almonds,cooked rice,fresh coriander,mint leaves,fried onion,green chillies,cooked rice & press gently,fold the edges to close then flip on baking tray.
-In egg yolk,add milk & whisk well.
-Apply on dough with the help of brush & sprinkle sesame seeds.
-Bake in preheated oven at 180C for 15 minutes (on both grills).
-Carefully cut the dough & serve with raita or salad.

-Hara dhania (Fresh coriander) chopped ½ Cup

-Zarda ka rang (Yellow food color) 1/3 tsp or as required
-Ghee 1 & ½ tbs
Directions:
-Bowl mein chicken qeema,lal mirch powder,haldee powder,garam masala powder,namak aur baisan dal ker ache tarhan mix ker lein.
-2 minutes kliya koyla ka dhuwan dein.
-Haathon ko oil sa grease karein aur mixture ko la ker ek jaisay sizes ka koftay tayyar ker lein (makes 30-32).
-Karhai mein cooking oil aur koftay dal dein aur golden brown hunay tak fry ker lein & side per rakh dein.
-Us he karhai mein pyaz dal dein aur translucent hunay tak sauté ker lein aur bowl mein nikal ker side per rakh dein.
-Grinder mein badam dal dein aur ache tarhan grind ker lein.
-Sautéed pyaz dal dein aur grind ker ka smooth paste tayyar ker lein.
-Us he karhai mein cooking oil garam karein aur grinded pyaz & badam paste dal ker ache tarhan mix ker lein.
-Adrak lehsan paste aur grinded hari mirch dal ker ache tarhan mix ker lein.
-Namak dal ker mix karein.
-Chicken white korma dal ker ache tarhan mix ker lein.
-Dahi dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Ab fried koftay dal ker gently mix ker lein.
-Dhak dein aur darmiyani ancch per 5 minutes kliya paka lein phir tez ancch per oil alag hunay tak paka lein.
-Cream dal ker ache tarhan mix karein & side per rakh dein.
-Pot mein half quantity chawal,koftay with gravy,podina,hara dhania aur baqi bachay hoye chawal dal dein.

Palak Kofta Kadhi
Serves 5-6
Recipe in English:
Ingredients:
-Dahi (Yogurt) 2 Cup
-Baisan (Gram flour) roasted & sifted ½ Cup
-Pyaz (Onion) grinded 1 medium
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Namak (Salt) 1 tsp or to taste
-Dhania (Coriander seeds) roasted & crushed 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Garam masala powder 1/4 tsp
-Lal mirch (Red chilli) crushed ½ tsp (optional)
-Haldee powder (Turmeric powder) 1 tsp
-Pani (Water) 4-5 Cups or as required
-Baisan (Gram flour) sifted 3/4 Cup
-Palak (Spinach) 2 Cups
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Baking soda 1/4 tsp
-Zeera (Cumin seeds) crushed 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Garam masala powder ½ tsp
-Hot water 3-4 tbs or as required
-Cooking oil for frying
Prepare Tadka:
-Cooking oil 3-4 tbs
-Pyaz (Onion) sliced 1 small
-Lehsan (Garlic) sliced 2 cloves
-Sabut lal mirch (Button red chillies) 3-4
-Zeera (Cumin seeds) 1 tsp
-Kary pata (Curry leaves) 8-10
Directions:
-In pot,add yogurt and whisk well.
-Add gram flour,onion,ginger garlic paste,salt,coriander seeds,red chilli powder,garam masala powder, red chilli crushed,turmeric powder and whisk until well combined.
-Add water and whisk again.
-Put it on stove,mix continuously and bring it to boil,cover and cook on low flame for 1 hour & keep mixing in between.
-In bowl,add gram flour,spinach,ginger garlic paste,baking soda,cumin seeds,turmeric powder,salt,red chili powder,garam masala powder and mix well.
-Gradually add hot water and mix well,cover and let it rest for 10 minutes.
-Grease hands with oil,take a mixture and make balls of equal sizes (makes 9-10).
-In wok,heat cooking oil and fry spinach balls on medium flame until golden brown.
-In cooked kadhi,add fried spinach balls and mix gently,cover and cook on low flame for 20-25 minutes.
For Tadka:
-In frying pan,add cooking oil,onion,garlic,button red chillies and fry until light golden.
-Add cumin seeds,curry leaves and mix well.
-Now pour tadka in curry & serve!

Prepare Grilled Chicken:
-In bowl,add paprika powder,cardamom powder,salt,cloves powder,garlic powder,cinnamon powder, red chili powder,cumin powder,garam masala powder,olive oil,yogurt and mix well.
-Add chicken pieces,mix well and marinate for 2 hours.
-Grease grill pan with oil and grill marinated chicken from both sides until done while brushing with oil.
-Then cut into desired pieces and set aside.
For Toasted Garlic Pita bread:
-In butter,add garlic powder and mix well,brush pita bread with garlic flavored butter.
-Heat griddle,place pita bread and brush top with garlic flavored butter.
-Toast from both sides until golden brown.

-Whole chicken 1 kg approx.
-Badam (Almonds) ½ Cup
-Khashkhash (Poppy seeds) 2 tbs
-Kaju (Cashew nuts) 14-15
-Pyaz (Onion) fried 2 medium
-Pani (Water) ½ Cup or as required
-Cooked rice
-Kishmish (Raisins) 1 tbs
-Anday (Eggs) hard boiled 2
-Oil 1 & ½ Cups
-(Kashmiri red chilies) powder ½ tsp or as required
-Dahi (Yogurt) whisked 1 Cup
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) ½ tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Zeera powder (Cumin powder) 1 tsp
-Garam masala powder ½ tsp

Directions:
-In bowl,add yogurt,red chili powder,coriander powder,garam masala powder,cumin powder,salt, kashimir red chili powder,ginger garlic paste and mix well.
-Add cuts/marks on whole chicken and rub the marination all over the chicken and let it marinate for 4-6 hours or overnight in refrigerator.
-In blender,add almonds,poppy seeds,cashew nuts and blend well.
-Add fried onion and water,blend until well combined & set aside.
-Stuff the marinated chicken with cooked rice,raisins and boiled eggs and tie the whole chicken with thread and use skewers to hold the chicken together.
-In a wok,add oil and place stuffed marinated chicken and fry from all sides until golden brown and sprinkle kashmiri red chili powder and keep turning sides in between.
-Cover and cook on low flame 6-8 minutes each sides and keep changing sides in between & set aside.
-Remove excess oil,add grinded paste and mix well.
-Add yogurt and mix well.
-Add red chili powder,salt,coriander powder,cumin powder,garam masala powder and mix well for 2 minutes.
-Add water,mix well and bring it to boil and cook for 2-3 minutes.
-Add fried chicken and basting with the gravy,cover and cook on low flame until oil separates (8-10 minutes) and keep changing sides in between and basting with gravy.
-Serve with rice.
