Plain and chocolate Pancakes
Recipe in English:
Plain Pancakes:
Ingredients:
-Maida (All-purpose flour) sifted 1 Cup
-Baking powder 2 tsp
-Bareek cheeni (Caster sugar) 2 tbs
-Namak (Salt) ¼ tsp
-Anda (Egg) 1 large
-Makhan (Butter) melted 2 tbs (unsalted)
-Doodh (Milk) ¾ Cup or as required
Directions:
-In bowl,add all-purpose flour,baking powder,caster sugar,salt and mix.
-Add egg,butter,milk and whisk until well combined & set aside.
-Grease frying pan with butter and pour ¼ cup & 1 tbs of prepared batter and cook on low flame from both sides until done (Flip when bubbles rise on the surface approx. 1 minute each side) makes 4 large & 10 small pancakes.
-Drizzle honey & serve!

Important Tips:
Timings are very important in this recipe.
Yeast fermentation required 15 mins.
After making Jalebi batter let it sit for maximum10 mins, texture will be slightly changed.
Never leave batter for long and do not store it. Use batter within 10-15 mins
Dip jalebis in warm sugar syrup immediately after frying.
Dip in Sugar syrup for 5-10 seconds. Fold in syrup and take them out.
Instant Jalebi
Recipe in English:
Ingredients:
Sheera (Sugar syryp):
-Paani (Water) 1 cup
-Cheeni (Sugar) 2 cup
-Hari elaichi (Green cardamom) 2-3
-Leemo ka rus (Lemon juice) 2 tsp
For Jalebi:
-Paani (Water) lukewarm 2-3 tbs
-Cheeni (Sugar) 1 tsp
-Instant yeast ½ tsp
-Maida (Flour) 1 cup
-Orange Food color 1 tsp or as required
-Ghee melted 1 tbs
-Baisan (Gram flour) 1 tbs
-Paani (Water) as required
-Desi ghee for frying
Directions:
For Sheera (Sugar syrup):
-In pot,add water,sugar and green cardamom,mix it and cook until syrup thickens.
-In the end, add lemon juice, stir well and set aside.
-Sheera is ready.
For Jalebi:
-In lukewarm water,add sugar and instant yeast,mix & let it sit for 15 minutes.
-In bowl add flour, orange food color,ghee melted,gram flour,yeast mixture,water and make a batter of desired consistency. Let it rest for 10 minutes and consume immediately (within 10-15 minutes).
-Now pour this batter in the sneezing bottle.
-In frying pan, heat desi ghee and squeeze the bottle and make centric rings with the batter.
-When one side is cooked, turn over and fry the other side.
-After frying, immediately put the fried jalebis in the sugar syrup. The sugar syrup should be slightly warm when you add jalebis in it.
-Turn over after a minute so that both sides are coated with the syrup.
-Keep them in the sugar syrup for about 2-3 minutes.
-Remove jablebis with the help of tong and shake lightly so that excess sugar syrup.
-Jalebi is ready to serve.

-Bowl mein maida,orange food color,ghee melted,baisan,yeast mixture aur paani dal ker mix karein aur desired consistency ka batter tayyar karein aur 10 minute kliya chor dein aur foran istamal ker lein (10-15 minutes).
-Ab is batter ko sneezing bottle mein dal dein.
-Frying pan mein desi ghee garam karein aur squeeze bottle ki madad sa batter k centric rings bana lein.
-Jab ek side sa jalebi fry ho jaye tou turn ker k dosri side ko fry ker lein.
-Frying k foran bad fried jalebi ko sugar syrup mein dal dein.Sugar syrup halka garam huna chahiya.
-Sugar syrup mein jalebi ko turn ker lein ta k dono sides sa syrup coat ho jaye.
-2-3 minutes kliya sugar syrup mein chor dein.
-Tong ki madad sa jalebi ko syrup sa nikal lein aur halka sa shake karein ta k ezafee sugar syrup nikla jaye.
-Jalebi tayyar hai.

Gulab Jamun Recipe in English:
Ingredients:
• Lassa khoya 250 grams
• Baking soda 1 pinch
• Salt 1 pinch
• Flour 1/3 cup
• Egg ½
Syrup:
• Water 2 cups
• Sugar 1 & ½ cup
• Kewra water 1 tsp
• Cardamom powder 1/2 tsp
• Lemon juice 1 tsp
Directions:
To make syrup, in a pan add water and sugar and cook until it becomes a sticky syrup. Now turn off the flame and add kewra water, cardamom powder, lemon juice and mix well.
In a bowl take lassa khoya and crumble it well with your hands. Add flour, baking soda, salt, and egg and mix well to a smooth dough. It needs kneading for at least 6-8 minutes.
Now make small balls of same size. Make sure they are smooth and have no cracks.
Heat ghee, and add balls and fry gently and stir continuously. Make sure ghee is not very hot otherwise gulab jamun will not cook well from inside or will burn.
When gulab jamuns becomes golden, add them directly to hot syrup. Make sure syrup is hot (not burning hot).
Repeat frying process. Add all gulab jamuns in syrup and leave them for 60 minutes
Garnish with pistachios and serve
Gulab Jamun Recipe in Urdu:
Ajza:

• Elaichi powder 1/2 tsp

Banane ka tareeka:
Ek pan main pani len aur cheeni shamil kar ke pakayen. Jab tak ke garha sheera banjaye. Ab choolhay se utaar len aur kewra arq, elaichi powder and lemon juice shamil kar ke achi tarah mix karlen.
Ek bowl main lassa khoya lekar achi tarah hathon se choora choora kar len. Maida, baking soda , namak, aur anda shamil karke mix Karen. 6-8 minutes tak goondhen taake acha sa paira banjaye. Ab is main se ek hi size ki choti choti golian banalen. Dhiyan rahe ke golian smooth hon aur cracks na hon.
Ab ghee garam kar lain aur ek ek karke golian daalen aur medium aanch par fry Karen. Aanch tez na ho warna gulab jamun jal jayenge ya ander se kache reh jayenge. Jese hi gulab jamun golden hojayen garam sheere main shamil karte jaye. Sheera garam hona chahiye. Ek ghante keliye sheere main hi rehne den aur phir garnish karke serve karen.

Sheera (Sugar syrup):
-Pani (Water) 2 Cups
-Cheeni (Sugar) 1 Cup
-Hari elaichi (Cardamom) slightly crushed 7-8
Gulab Jamun:
-Dry milk powder 1 Cup
-Maida (All-purpose flour) ½ Cup
-Baking powder 1 tsp
-Hari elaichi (Cardamom) seeds ½ tsp
-Ghee 3 tbs
-Doodh (Milk) ¼ Cup
-Ghee for frying
Directions:
For Sheera (Sugar syrup):
-In saucepan,add water,sugar,cardamom and cook until sugar is dissolved.
For Gulab Jamun:
-In bowl,add dry milk powder,all-purpose flour,baking powder,cardamom seeds and mix well.
-Add ghee and mix until crumbled.
-Add milk and mix well,cover and refrigerate for 10 minutes.
-Wet your hands with water and knead until smooth dough.
-Now makes 10-12 small smooth balls of same size,make sure they have no cracks.
-In wok,heat ghee and fry on low flame while stirring gently.
-Make sure ghee is not very hot otherwise gulab jamun will not cook well from inside or will burn.
-When gulab jamuns becomes golden,add them directly to the hot sugar syrup and leave it for 30 minutes.
-Garnish with pistachio and serve.

-Haathon ko pani sa geela karein aur dough ko dubara ghond lein.
-Ab is mein sa ek size ki 10-12 choti smooth balls bana lein,is baat ka khayal rakhein ka balls mein koi cracks na hun.
-Karhai mein ghee garam karein aur halki ancch per fry ker lein aur musalsal stir kertay rahein.
-Is baat ka khayal rakhein ka ghee bohat ziyada garam na ho werna gulab jamun ander sa kachay reh jayenga ya phr jal jayenga.
-Jab gulab jamun golden ho jayen tou foran garam sheeray mein dal dein aur 30 minutes kliya chor dein.
-Pista sa garnish ker ka serve karein.
