Onions, potatoes, and mushrooms deep fried in a pancake like batter, resulting in a savory fritter for finger foods or appetizers Recipe: 3 cups canola oil for frying 1 cup gram flour or chickpea flour 1/2 cup white flour 1/4 cup rice flour 1 large onion diced 2 large potatoes diced 8 oz mushrooms diced Salt to taste fresh pepper to taste 1 tbsp dried parsley leaves 1 tbsp mango powder 1 tbsp lemon pepper 1 tbsp cayenne 1 tbsp Cajun seasoning enough water to make pancake like consistency Method: Mix all the 3 flours, and the dry spices in a big bowl and stir than start adding water slowly until batter resembles a pancake mixture than add the onions, potatoes, and mushrooms, test oil by putting a little batter in it and once the oil bubbles than go ahead and add 1 tbsp amounts to the oil and deep fry until they turn golden, drain on paper towel and transfer to serving dish and serve with sauce of your choice and enjoy!!

Ing: 1 13 oz pack baking dates 1/2 cup pistachios 1 to 2 tsp ghee or butter All the below products can be used for garnishing! crushed slivered almonds for garnishing sprinkles for garnishing crushed pistachios for garnishing desiccated coconut for garnishing sweetened coconut flakes for garnishing Method: In a wide frying pan add the ghee and let it melt, then add the dates and flatten it, this will help cook it evenly, on the side add the pistachios and toast it lightly, after about a minute or so mix everything together and cook it for about 3 more minutes. Shut the stove off and divide the mixture in two, put one half of the mixture on a saran wrap and for it in a cylinder then add the topping of your choice make sure the whole thing is coated well, cover it well and pop it in the freezer for about half an hour then unwrap and slice using a serrated knife! Enjoy! Makes about 20

Ing: 1 Chicken cut in 8 pieces 1 large onion Julienned 1 tbsp ginger and garlic 1 tbsp nihari masala 1 fresh lime juiced 2 tbsp white flour 1/2 cup water salt to taste fresh ginger Julienned for garnishing 1/4 cup canola oil (1/2 cup was a bit too much) Method: In a pot add the oil and fry the sliced onions till golden brown and set aside, next in the same oil add ginger and garlic, making sure you don\\\'t burn it, than add 1 tbsp of the Shan nihary masala and fry it in the oil, once it has released the flavors add the chicken and turn it so it is completely mixed with the spices, cover till the chicken is cooked. In the mean time mix the water with the flour and this will be our thickening agent for the curry, keep it aside. At this time prepare the cucumber pickle. While you are making the pickle keep an eye on the chicken turning it occasionally. Make sure not to over cook the chicken as doing this will make the chicken really tough and dry. Add the flour and water mixture in the curry and stir till it thickens up a bit. If you want more gravy add more water to it, if you want the nihary thick than don\\\'t add the extra water. Season it with salt per your taste and some fresh lime juice, do a taste test and make sure the taste is how you like it, lastly sprinkle the fried onions, fresh cilantro and ginger.. Enjoy! Cucumber pickle 1/2 a onion julianed thin 3 to 4 small baby pickles sliced thin 1 lime juiced 1 tbsp vinegar salt to taste Cayenne powder (optional) Method: Once you have cut the onions and cucumbers add the lime juice, vinegar, salt and marinate it for at least 20 min. Add the cayenne just before serving, if you want it really spicy you can add it when you add the vinegar.

Ing: Preheat oven to 400 2 cups oil 2 lbs chicken breast cut in long strips 1 tbsp ginger and garlic salt to taste 1/2 tsp of pepper 3/4 tsp lemon pepper Marinate your chicken 1 cup white flour season the flour with 1/2 tsp of salt 1/2 tsp garlic powder eggs season eggs with 1/2 tsp salt 1 tsp lemon pepper 11/2 cups panko bread crumbs season the panko bread crumbs with 1 tbsp dried parsley flakes Method: Start of by preparing your chicken and marinating it. Get all your other ingredients and season that well too, next take a chicken strip dip it in flour first, then egg, then lastly dip it in panko bread crumbs and make sure it\'s coated well, prepare all of them and if you are baking them put them on a greased pan and stick them in the oven, if you are going to fry them heat your oil, test your oil if it sizzles then add the chicken strips in one by one on med heat, it should take 5 to 7 minutes for the chicken to cook through! Bake the chicken for about 25 to 30 minutes making sure it is cooked through! I served them with homemade fries! Enjoy!
